Day 1 of my NO SHOP FEBRUARY challange.
This was tonight's dinner.

My take on Cactus Club modern bowl. Brown rice, roasted cauliflower and broccoli, tabouli salad,pineapple salsa and a curried ginger carrot hummus and some fresh lettuce and shredded carrots and some avocados.Last edited by harbie; Thu, Feb 1st, 2018 at 10:03 PM.

Last night, chicken tenders and potato wedges from Co-op, they were really good. A bit spicy for me, but okay. I had some salad too.

Just finished making lean, thick pork loin chops ( crumbed and baked ) boiled up spuds and carrots, steamed bell pepper strips and garnished them with toasted almonds. That is what the guys are having for their work meal.....not sure what DD and I will have yet.

I was planning on making a Beef Stew today but forgot Mom is working tonight so it is only me for dinner. As well Mom is off this weekend so leftovers aren't needed for lunches/dinners so think I will come up with something else just not sure what yet.

Another busy day here and the kids are all gone for the weekend so my wife had sausages and I had 2 of those frozen oven meat pies
Wanted take out but its too cold to go out and I really hate tipping a delivery guy

Day 2 menu was naan pizza's topped with roasted butternut squash, caramelized shallots and garlic, sauteed kale with a bit of jalapeno jack cheese and goat cheese

..I have inside round steak marinading in a mixture of veg. oil, soya sauce, lemon juice, worcestershire sauce, dijon mustard, minced garlic cloves & S&P, going to fry in a hot cast iron pan to med. well, with it homemade oven crispy fries and a salad of mixed greens, with chopped apple, dried cranberries, sliced almonds & a raspberry dressing
