    Made this last night....oh wow what a punch! I used only half the chili powder measurement called for and my mouth was on fire....but in a good way! ha ha

    Tenderloin


    Ingred: 1-2 1/2 lb pork tenderloins, 1 tblsp oil, 2-3 tblsp fresh lemon, lime or orange juice., 2 tsp Italian seasoning, 1 tsp each of garlic powder, cumin, salt, chili powder, 1/2 tsp smoked paprika, 1/4 tsp black pepper.
    Cilantro ( garnish optional )

    Instructions: preheat oven 400 degrees, lightly grease baking casserole dish
    pierce tenderloins all over with a fork, rub oil onto all sides of the meat
    Whisk together seasonings, sprinkle over meat, patting into the surface and sides.
    Place in prepared casserole dish, drizzle lemon/lime juices over the top.
    Bake for 25-30 min until outside is brown and crispy and centres are cooked through to desired doneness.
    Spoon juices over the meat and allow to rest on cutting board for 5-10 min.
    Slice into 1 inch pieces. Spoon remaining juices over the slices and garnish with fresh chopped cilantro if desired.

    I added plenty of firm fresh white mushrooms sliced up and sprinkled on the bottom of the pan, placing the meat on top of them 15 min.before the pork was done.

    My wife said that we have excess of turkeys in one of our frezzers so just did one in the oven last night and had hot turkey sandwiches

    Tonight we are making a very small stew using the carcass and what ever meat is left on it

    That will leave the rest of the meat for next week lunches and maybe even a dinner

    A little late here but I have to agree with KFC last time we got it the breast was cut into 3 and the thighs into 2 pieces there were so small it was ridiculous.

    So happy it looks like our Mary Brown's is reopening after catching fire over a year ago. Since they closed KFC and Popeyes has opened in town and I am over KFC's small pieces and have not heard anything good about our Popeyes so have never ventured in.

    Tonight will be Homemade Meatloaf, with Mashed Potato Bake which will have Bacon & Cheddar in it, plus some sort of veggie I suggested Roasted Carrots but do not think it will happen so maybe a Salad instead.

    I did up a pan of " diet " style Shepherd's Pie. Used extra lean ground beef, a variety of fine chopped ( non starchy ) veggies sauteed and folded into mixture, topped with a layer of creamy mashed cauliflower. No salt, no trans fats. If I didn't know better I would have sworn that was mashed potato on top!

    Beef barley soup


    I tried Popeye's in Maine and wasn't impressed with their chicken. It barely had any flavour. Granted, I didn't have the spicy. Wouldn't go there again. Mary Brown's all the way.

    I had other dinner plans last night but I had thawed a whole chicken and put it in a baking dish with carrots and potatoes. DS loved it and there are leftovers in the fridge for him tonight.

    ...have a pk of turkey thighs thawing, going to make a NFLD jiggs dinner with all the trimmings (mostly because I need to use up a piece of salt meat in the fridge and the turnip & cabbage before it all spoils)
