I cooked a roast beef yesterday but that will be tonight's dinner since DS put it in the oven later then planned.
My guy made us the most wonderful salad last night. He used romaine and mixed greens and Greek dressing. Added peppers, onions, cucs, walnuts, strawberries and green apple. It was so yummy.

Ham and Swiss stuffed chicken breasts and roasted fresh garlic, peppers and cauliflower.
Homemade Apple pie and ice cream for dessert. i cant wait....Yum...yum....Yum...yum.

Last night I made Homemade Meatballs in Classico Portobello Mushroom Sauce and added some extra Mushrooms. This was served over Penne with Cheesy Garlic Naan and Cesar Salad.

I have some Shredded Chicken from A Costco Chicken we pulled out of the freezer and need to use up. So I am going to make Chicken Cesar Salad Wraps with Roasted Potatoes on the side.

Now that I bought a new Bread Machine, we are going to make Homemade Pizza for dinner tonight. I will also make a Salad to go with it.

Yesterday i made a a hodgepodge of things. chopped up some lettuce added a tomato and some cucumber and green onion. Then made chicken salad from the leftover chicken of the night before (saved the bones for soup that im making on Monday), 2 hardboiled eggs cut into quarters, 2 celery stalks cut in lengths and put some Cheez Whiz on them, and some stuffed olives. Dressing was Oil and Vinegar. Dessert was plain ole ice cream.
Tonight im making beef stew with lots of beef (small cheap reduced price piece of steak), onions, garlic, carrots, celery, and potatoes. Will let that simmer this afternoon. Will also bake a crusty baguette (frozen from Costco). Dessert will probably be canned Fruit Cocktail.

yesterday I must have reached a level of boredom that I have never climbed to before as I boiled up 3 x 340 gram pkgs. of egg noodles, added 5 jars of Classico white sauce (2 Alfredo and 3 of the 4 cheese ) dumped in sauteed diced celery, frozen green peas and chunks of leftover roasted chicken breast ( the cooked ones from FB ) . So delicious and plenty there to last for days.
Then I trimmed the outside of a Pumpernickel loaf that no one had even opened! ( grrr, there were a few mold spots ) I diced the perfectly good loaf remaining into chunks. Soaked them quite a while in beaten eggs. Sauteed the whole amount in butter in the cast iron pan nice and slow, flipped it over and topped with crumbled Feta cheese! Turned off heat and covered to let cheese melt.
Then I boiled up 2 pkgs of the rice that no one here eats! ( second grrr! ) It was an oriental mix to which added 1 pouch of the Uncle Bens Bistro ( the ones with the black beans in them ), then dumped in a box of Wong Wing lemon chicken ( frozen, so I just nuked the 2 pouches ) Pretty decent mixture in the end.
Cooked up 8 Blue Menu burgers.
This should hold off the crew for awhile and with all those carbs they'll all be in a coma soon! ha ha
