DH and I enjoyed an early dinner, just a half sized serving of his homemade pasta...the man loves pasta.
Later on I made up 3 of the best hard shell ( standing up kind with the flat bottoms ) tacos ever!
Melted cheese on bottom, meat layer, diced red/green pepper, grated carrot, green onions, shredded romaine.

A chicken stir fry done with frozen veggies. (I really love that people post dinner and lunch ideas on SC, I find we eat better meals when planning ahead, thanks!)

Yesterday thawed ground beef to make something but ended up getting chicken take-out..hee hee...it was sooo good..so will have to make something today from the ground beef, probably pasta

hubby is making his mom's recipe for a rice dish (white rice mixed with a cheese sauce, topped with cooked ground beef, then more cheese, then baked in the oven). I will be fixing a small side salad for myself; i need veggies.

Tonight we had Ground Turkey & Sweet Potato Chilli and Cornbread I made on the weekend, just needed to reheat and serve.

Lol. Well growing up on a small farm, we had all sorts of vegetables and i ate them all. We what we grew including fruits. Nothing like fresh off the tree fruits, from sour cherries to gooseberries, choke cherries, to red currants, plums, apples and wild plums that grew in the forest near the house. Meat was scarce and only what my parents had on the farm. The only vegetable that i truely dont like is fiddleheads! Or is that a fruit, no i think its some sort of vegetable what we picked in the forest in the spring.
