    Tonight will be lasagna since I’m making several (some med and smaller sizes) for the freezer and my parents too. Side salad to go with it. I think I may do a hummus based Caesar dressing.

    All done in the kitchen for the day! This is all for dinner later on whenever the guys want to eat dinner??
    Baked both Swiss Chalet meat pies up ( a special Moi price of just $6.00 each! ), boiled and mashed close to
    5 lbs. of red spuds ( they had too many eyes on them, needed to be used up ) and cut 7 very big carrots into
    thick coins boiling them also.
    For dessert Betty Crocker and I made a lemon cake, that is still cooling. Will drizzle a very lemony thin icing over
    it soon.

    Hauled a " mystery " ziploc bag from the freezer. Shake & Baked the 6 thick pork chops that were inside.
    These chops were sliced off of one of the sale priced pork loin roasts weeks ago. The guys will enjoy these for their
    work meal, plus boiled spuds, steamed Brussels sprouts and a few spoons of baby peas + corn. My work is done....

    DH just announced he's making dinner! Next he asks " what do ya prefer, Wendy's or Burger King? " Good Grief!!!
    Nothing thanks. I'll scour the leftovers in the fridge while he and DS bask in their fast food delicacies. Hilarious, the 2 of them.

    Greek salad and beef rendang. Except the ship was really rocking so I had to retreat to the cabin and take some sea calm. So my dinner was delivered but I only had a couple of bites of my main course-didn't want to push my luck!!

    The seas have calmed so tonight I look forward to Tiger prawns, scallops and gnocchi. Better enjoy the fancier foods while they last!

    Not sure if I am setting myself up for failure trying to get dinners back on track the week after daylights saving time (I do not handle time changes well, but we are pushing through), but we will see how it goes. Maybe, just maybe posting here will keep me accountable.

    Tonight is Feta Greek Meatballs with Lemon Orzo, Creamy Feta Dressing and Cucumbers for dipping.

    Our dinners have been sort of hit and miss as of late. DH is in serious back spasm/pain mode atm, so not a happy
    camper at all. He still makes it to work as best he can wearing medicated SalonPas pads and resorting to the occasional
    pain med. With my most recent carpel tunnel issues many work meals have the guys taking in sammies, canned soups
    and the like. Things happen. Maybe this week a miracle will happen! lol

    Last night was falafel bowls. Falafels from Costco, jasmine rice, cherry tomatoes, mini cucumber, purple cabbage, red onion, cremini mushrooms and pumpkin seeds with a creamy Italian dressing since it’s all I had on hand and I’m trying NOT to go shopping for a bit.

    Last night I pressure cooked up 3 corned beef brisket roasts, each one cost about $8.50 and that was on sale? lol.
    Easier to cook them all at once for the mess that they create in my pot. Boiled an entire large roast pan of cut up
    cabbage to go with.
    Neither of us were very hungry at dinner time but that means more leftovers for the weekend!! A Swiss Chalet get
    together with my sis at 1 p.m. " may have " impacted our appetites for later on. I know I won't be cooking anything
    else until maybe Tuesday so dig in boys! ha ha

    @walkonby , oh no, I have heard both Back Pain and Carpel Tunnel can be some of the worst when it comes to levels of pain. Hope you both feel better soon.

    Tonight I made Dutch Oven Chicken, it is supposed to be a Chicken Breast seared off, then you cook off Onions, Mushrooms and Carrots and a create a cream sauce using flour Chicken Broth and a little bit of half & half. I used Chicken chunks instead of a Chicken Breast so we can just pour it over mashed potatoes.

    It slightly reminds me of a dish a great grandfather made but his was with Pork and used Cream of Mushroom Soup, I know different but maybe it is just the comfort aspect of the dish.
