Have my Pork Roast sitting in a Nice Garlic BBQ sauce in the Crockpot as we speak!!!! Will have mash potatoes and corn also.

I have been so busy today!
For dinner tonight I am making a beef teriyaki stir fry with broccoli and onions. I have the beef cut in thin strips marinating in a teriyaki garlic sauce. I also cooked the broccoli and cut up the onions so that all I have to do tonight is quickly throw the stuff in and make some rice. Dinner will be ready in a flash, hehe.
I also am going to make mini-pizzas after dinner tonight so I can freeze them and have them in our lunches during the weeks to come. I have allll the toppings prepped and put into bowls so that it's ready to go. The toppings are:
- provolone cheese
- mozzarella cheese
- chopped sweet red pepper
- yellow pepper
- pepperoni
- chicken bits
- zucchini
- green onions
- pineapple
- broccoli
- mushrooms
It took a long time to put it all together, but I'm glad I did it ahead of time! Now just the fun and creative part left.
And last but not least, I have chipotle cheeseburger mini meatloaves in the oven right now. Sounds a bit weird, but I think it is going to be delicious! I mixed ground beef with chopped onions, garlic, italian bread crumbs, eggs, BBQ sauce, chili powder, worcestershire sauce, and probably some other random things that I forgot to mention. I filled 12 muffin tins half way with the meat mixture, and put some grated cheddar cheese on top. Then I put the rest of the meat over that. When you slice through it, you will get a nice melty cheese surprise! We are going to have it for meals over the weekend, but I wanted to make it ahead of time because I have a lot of studying and essaying to do over the next couple of weeks and it's really nice to not have to stress about what to have for dinner while stressing over other things!

I am starting P90X tomorrow with a fancy new diet and nutrition guide so as my last "meal" I made a nice traditional British Sunday dinner (I know, not Sunday LOL)
Roast Beef
Roast Potatoes
Broccoli
Cauliflower
Peas
Carrots
Yorkshire Pudding
Gravy
and some pickled beets
