    Mmmmm that sounds good, Kim! I took out two chicken breasts today and thought about baking them up with a can of sliced peaches...plain rice...sigh...but your dinner might be very yummy!

    I want to make this one day for dinner really soon..Reuben sandwich casserole.

    Ingredients:

    1-32ounce jar sauerkraut, rinsed and drained well (squeeze out extra moisture)
    1/2 cup chopped onion
    1/4 cup chopped parsley
    2 teaspoons caraway seed shopping list
    4 cups shredded reduced-fat swiss cheese (16 ounces)
    1-1/3 cups fat free Thousand Island salad dressing
    1 lb. thinly sliced turkey pastrami; coursly chopped
    1/2 cup light margerine
    6 slices light Rye bread; cut into 1/2 inch cubes (approx. 5 cups)
    ------------------------------------------------------------------------------
    In a large mixing bowl, combine drained sauerkraut, onion, parsley and caraway seed.
    Spoon mixture into a 13 by 9 in. baking dish, sprayed with Pam, spread the mixture evenly.
    Layer with half of the cheese, half of the salad dressing and all of the meat.
    Layer with the remaining salad dressing and cheese.
    In a large skillet, melt the margarine. Add the bread cubes and stir until coated. Sprinkle bread cubes over the top of the casserole.
    Bake in a 350 degree oven for 35 min. or until heated through and bread cubes are browned.

    that sounds delish! i LOVE sauerkraut. my mom used to fry it up with some diced bacon and we'd put it on sausages or hot dogs. nummies!

    Well, DH left for school today (trade school, 10 weeks in Edmonton) ...
    So the kids are getting toaster waffles and I am enjoying a handful of walnuts. Maybe I'll cook tomorrow, maybe the boys will get cereal...I haven't decided yet.

    I made mini meatloafs with sauted mushrooms,grated garlic,carrots and onions with a side of mashed taters, Knorr demi glaze (with some red wine and spices added ) and a side of wilted kale with diced garlic
