Making beef stew. Perfect for this snowy day, or at least the after math of a snowy night.

Sundays I try and pre make stuff for the week, so I am thinking of making some spinach balls for my lunches, I caught an episode last weekend and thought that these looked delish & easy! http://www.foodnetwork.ca/guides/let...l?dishID=11425

Last night I had the last of my sausage jambalaya yummmm!!! I make it differently than any other recipe I've tried and I love it so I make enough for a few days and am always sad when it's gone.
Tonight I'm having roasted veggies (onions, cauliflower, broccoli, carrots, sweet potato, asparagus, corn, peppers) and chickpeas with a special veggie seasoning. I thought I should have only veggies considering all the sausage I've been eating this week lol

I am peeking in on this thread hoping to get a little inspiration for dinner! I was thinking about meatloaf, or maybe perogies, but just not sure-I guess I will have to go wander around the stores and figure it out. I do know that I am going to bake a coconut caramel cake today tho-since my coconut cream pie worked out amazing I am on a roll with the coconut!

I used some leftover stewing beef and cut it up and marinate it in a teriyaki sauce I made up so hopefully its edible lol. That, and rice, carrots, broccoli and onions.

Unusual for a Monday to have such a big dinner, but made a roasted chicken with stuffing; brown rice (first time making it!), with sauteed onions and mushrooms; and yummy gravy.
Shocked to discover there is barely anything left! Snackies for me for lunch tomorrow.
