Yay for McDonald's coupons - the only time we can afford to eat there! I had a Big Mac, med fries and an orange juice.

i bought some bistro stuffed chicken breasts yesterday at M&ms since they were on sale wub4 plus it was the scratch and save.. so, debating on either that with rice and broccoli, or galric bread pizza.. decisions, decisions...

Tonight, I'm making homemade pizza, did some of the cutting up prep already, will make the dough a bit later, since we're having a later supper because Milan is working at evening Mass. Pizza toppings - ground pork (my new fave, awesome on pizza!), honey ham, pepperoni, onions, mushrooms, and mozza.

We were treated to a lovely meal hosted by DS and his sweetie. They had a serve yourself salad " bar" All organic stuff too, romaine, cherry tomatoes, strawberries, apples, cucumbers. I still love to top mine with Kraft raspberry Vinaigrette dressing.
Main courses were lasagna and macaroni and cheese. ( I am certain she said she used the recipes from the latest " What's Cooking " magazine., which I signed them up to get it FREE! , lol)
For dessert they put out some salt water Taffy and fudge that they brought home from a trip. Then later we all had some of the Bundt cake I had made ( it sure was nice and lemony)
Gosh food tastes great when someone else does all the work.
Oh and they have a fancy shmancy coffee machine that makes lattes, etc. so we had that too.

Last night was veggie breakfast sausage rounds (yup, we really break with tradition by having them for dinner), rice, kidney beans, salad. It was good.

I searched for a simple method, since I hadn't done it before. If I do it again, I'd use the same recipe.
Roast duck in 450 degree oven, 20 minutes to the pound.
Place something in the duck cavity to attract off flavours (sliced apple, onion, celery) - note: remove after roasting, don't eat.
Put on rack in roasting pan, roast uncovered. Rub duck with lemon, and put in oven.
After 30 minutes, prick skin to allow fat to escape. Repeat several times.
Just before done, brush on glaze -
1 c. apricot preserves
1/2 c. honey
1 T brandy
1T orange liqueur
Retun to oven for about 15 minutes until glaze carmelizes.
