oh yum! since i've had gallstones i've been replacing ground turkey in everything instead of groundbeef to make it a bit leaner. i think its tastier than the beef. too bad i ordered 1/2 side of beef for july before finding out i had gallstones. ah well.
tonight is bbq'd chicken breasts, bbq'd asparagus, mashed potatoes (rice for me) and some purple jello the girls made.

Figured out what to make - homemade pizza tonight with ground pork, ham, salami, pepperoni, mushrooms, onions, and hopefully I can find some pineapple for my two slices!

So I have been away from SC for a while but not from the kitchen so this is a sampling of some of our recent dinners.
Southwestern Couscous with fresh bbq corn
Homemade Ceasar salad dressing and grilled shrimp in white wine and garlic
Chicken burger loaded with roasted veggies (Coscto), pepper jack chhese and a berry, goat cheese and spicey candy pecans
and we can't forget dessert
Mini bite sized cinnamon buns
and of course SMORE'S!!!!

Last night I roasted a turkey breast and made a watermelon salad with green onions and feta. Today I bought a couple beautiful thick pieces of halibut, so tonights dinner is fish and chips.....can't wait
of coarse I will make a salad as well, probably just a garden salad as the main coarse is pretty rich and filling.
We all need a little sunshine every now and then

Yesterday stir fry beeg with lots of veggies- sweet peppers, green beans, carrots, mushrooms...over rice.
Tonight, breakfast for dinner- homemade whole wheat waffles, smoothie made with the europe's best fruit essentials that was super cheap after sale and coupon, and scrambled eggs. It is all healthy and so filling.

after reading that abby5 made turkey sheppards pie, i felt like making it too! (and needed something ready to pop in the oven when we came home from dd1s JK orientation). i found a recipie online that called for a can of mushroom soup to add to the meat mixture along with a bit of ketchup, onions, carrots, peas. i was really hesitant of how it would taste but it was really good. DH loved it. made a side of corn to go with it.

I made tikka masala with chicken, onions, carrots, peppers, mushrooms and tomatoes, served with jasmine rice. I never had it before getting coupons for Patak's last year, and it's now one of my favorites.
