    Tonight will be homemade pizza - featuring a whole-wheat crust from scratch and homemade tomato sauce. On the side, I plan to do some grilled zucchini. Mmmmmm

    How about some veggie lasagna for lunch wholesome & nutritious,
    Even though it is meatless, it is still incredibly delicious,

    Zucchini, broccoli & peppers with a heavenly tomato sauce,
    & some salad greens as a side, just for you to toss,
    Of course a generous helping of provolone, mozzarella & ricotta,
    Sit down at the table & enjoy a lasagna lunch regatta,
    Sparkling water with lemon goes really well with this,
    Or a glass of a fine merlot, just may find you in bliss,
    Lasagna is a feast that is intended to share with friends,
    As when you’re in the presence of good company, contentment always lends.

    Meatless tonight - would love to have some of Loocie's lasagne above!!!

    However, I'm trying a recipe for an imitation crab casserole - if we ever go to a Chinese restaurant with a buffet, there's one there that my son just gobbles up - he picks out the cauliflower, though.

    So I found a few recipes, and will be giving it a try - it's basically the fish au gratin.

    The word used for meat is carnis. In modern English, the word meat can refer to any animal flesh. But, in the Latin, it refers to mammals and birds only. So, fish and seafood are allowed for us on meatless day, but mammals and fowls are not.

    I have no idea what we are having for supper tonight. DH won't be home for a few hours, so I still have time to debate. I have to keep my diet high in calcium, iron, and protein.

    Last night I made a chicken and vegetable stir-fry that I served with noodles and a big glass of milk.

    Despite the awful heat this week, I made what could possibly be my favourite food - beet leaf rolls. I almost ate all I made in one sitting, but resisted. LOL Beet leaves $1.50, cream bought with a coupon, rice-pennies. Still have the beets - I guess borscht is up next (when I'm not too lazy or hot).

    I also made Gazpacho - nice hot weather food.

    It all sounds so great. Turns out dh got home earlier than expected (6:30) so I ended up making a chicken fried rice, bean sprouts with broccoli and onion dish and I did a honey garlic chicken.
