Last night leftovers take your pick, chili or pasta. I love a no cook night especially on Tuesday because my son's swimming lesson are from 5:30 to 7 it's an awkward time. But it is my power shopping hour. LOL
I'm feeling like breakfast for dinner tonight too. We'll see how the day goes.

Last night we had BBQ'd steak & mushrooms with white rice and broccoli. And a side of Pepsi for DH.
MINI BRAG: I just have to share my new countertop with you (ie background) The best part was the shop cut a piece of the countertop the wrong size 64" instead of 72". We received a replacement so when I went to take the shorter piece back to the store, I asked the lady what they would be doing with the piece and if they would be selling it. I told her I would be interested in getting it to use as a cutting board. She told me to keep it for the inconvenience of having to reorder another piece.
Soo, DH just has to trim one angled side and I will have a cutting board about 39" long. Can't wait to make shortbread this Christmas!

Hey very nice but what about a wider shot for the whole reno thing? LOL Are we nosy, or what? Maybe I should start another thread about home reno projects and people can post those too. Seems like everyone I know is always up to their eyeballs in renos.

Mmmm that broccolli looks awesome!
Last night I made some sort of...quiche...thing. I don't know. Chicken and bacon and frozen veggie mix in a casserole bowl, added shredded cheese, topped with an egg/milk thing I put in the blender. baked at 350 for about 40mins.
Turned out pretty good considering I didn't know what I was doing!

I had to attend a birth last night so dinner for me was what about 10 sample sized luna bars eaten quickly in the corner.

Gonna make an idiot-proof dish tonight, cause I`m a...nevermind.
I just cook for the brats & me, so my culinary skills leave something to be desired. Here`s the recipe if you want something quick, cheap & tasty.
Paprikas Potatoes
1 med onion, chopped
4 potatoes, peeled & cubed
3 sausages, sliced thinly
1 tsp paprika (mild or hot)
1 pepper, cored, in large pieces (mild or hot)
2 tbsp oil
Saute onion in oil in a large pot.
When onions are translucent, add paprika & stir.
Turn down heat to medium.
Add potatoes, sausage & pepper.
Add 1 cup water.
Stir.
Cover pot & let simmer for roughly 45 minutes, until potatoes are tender.
Serves 4.
Check after 20 minutes, you may need to add a bit more water. You should have a bit of sauce left in the end. It`s a good excuse to have some nice fresh bread in the house to sop up the sauce.It also freezes well - I make a big batch, then have food for when I don`t have time or energy to cook.
Add a salad for a complete meal, or you can use it as a side dish. You can use any kind of sausage, I`ve even made it with hot dogs.Of course, I have to add an extra hot dog or 2 when I cook, since I have to share with the ravenous beasties.

Tonight is just sausages on a bun with potato salad and garden salad. Minimal cooking for the pregnant lady who feels like her baby is about to drop out today

OOOO just found this thread! i LOVE to cook. Will have to start taking pics of notable dishes for you all!
Not sure what I'll be having tonight as it's my late night getting home (have to go ride my horse after work, so won't be home until 7:30). Last night's meal was pretty good thoughGrilled some chicken breasts on the bbq, also made a foil pack of cubed up potatoes w/ a bit of olive oil, garlic, thyme, and oregano.. cut tomatoes in half and topped with extra old cheese and grilled them on the bbq too. Also had a nice salad with a simple dressing of herb dijon mustard, red wine vinegar and olive oil. mmmmmmmm it was tasty

we are having chicken strips in wraps tonight making them like KFC wraps with the mayo and lettuce mix and whole wheat wrap instead of white mmmmmmm sounds good to me LOL
