Just cooked up something for me only, around noon today. Sliced eggplants baked in 400 degree oven. Brushed the pan and then the top side of each with bit of coconut oil, placed No Salt added, but fresh herbed seasoned tomato sauce over the top, teensy bit of grated mozz, and sprinkled with GF breadcrumbs.
Acorn squash, scooped out and baked with nothing on it at all! That was lunch!

Beef Stroganoff over boiled potatoes tonight. Thinking some chocolate cake with icing for dessert, have some left over from mom's demo on the weekend.

Tonight I did a pizza pasta with garlic toast. I had a ton of pepperoni left over from making pizza last night and am out of dough. I didn't want to re-freeze the leftovers since it has been in the freezer for awhile so I cut it up and just tossed it into my pasta and it was pretty good!

muggos, that looks SO good!
Last night for supper was homemade pizza - toppings were onions, mushrooms, green peppers, salami, leftover baked ham, and mozza.
Tonight, easy choice since it's Pancake Tuesday - will make regular pancakes, served with bacon.

I had a craving for fish, so last night, instead of leftovers (of which we ate all the salad for lunch anyways), I made a nice gluten free beer batter and made fish and chips. If you haven't tried the halibut fillets from Costco, they are fabulous. Nice and thick. The fries were homemade spicy fries done in the oven...mmmm, was delish. I also made a nice spicy tarter sauce to go with it and a nice coleslaw.

Tonight's dinner is pancakes, and I think I will cook some bacon and cut it up and put it into the pancake batter. Nothing better than some bacon in every bite

Crazy baby (teething? Growing pains? ) pulled rank last night so we ended up ordering swiss chalet. Tonight I'm hoping to have the fajitas that were planned for yesterday (especially before dh realizes that we have kits in ziploc baggies because of fpcs on the box AGAIN! Lol)
