Since it's yucky cold rainy weather I am thinking rigatoni with homemade sauce and garlic bread....maybe a salad on the side????
dh texted that he is bringing home Subway and wanted to know what kind to pick up for me. :)
Edit: even better because dh informed me that our friend paid for it. dh spent a couple hours helping them demolish their shed on the weekend and has taken 3 trips to the landfill with our truck.
My husband cooked dinner tonight. He made handmade perogies ( bacon, potato and Colby cheese ) as well as 5 hour sautéed onions, and a baked Brie wheel with pear and mango compote as well as roasted garlic.

Last night was pasta with Classico Roasted Portabello Tomato Sauce with lots and cheese added and garlic toast with cheese.
Now to decide on tonight's dinner............................

I'm looking for yet another chicken recipe! We eat chicken a lot, especially thighs. Standard is baked in the oven (skin included since DS loves it) with Progresso bread crumbs, spritzed with olive oil.
I was thinking, what if I removed the skin/maybe bone from the thighs, rolled 'em up with (??) inside and put breadcrumbs outside? I'm looking for fairly healthy, what could I stuff it with? DS doesn't like regular stuffing, but I guess he could remove that. Maybe seasoned rice? Perhaps with some black beans and salsa, a bit of cheddar? Perhaps even some of my lower-fat sausage meat from my Biggest Loser cookbook (lean ground pork, thyme, sage, cayenne, salt, pepper). Any other ideas?
Today I had no time to cook, so we picked up a rotisserie organic chicken from Loblaws and had that with veggies.
