    yum on the many above posts, have to google 'red rice', guessing it's tomato-based, always wondered about 'dirty rice', too..
    Special yum on cevapcici - haven't had it for years - hm.... husband is on holidays this week, perhaps he can make some!

    Last night we had a huge Caesar salad and hotdogs. I had a huge freezie for dessert! Way too hot for anything else.

    I had another veggie burger I just can't get enough of them

    I also made ceasar salad, sweet tater fries and a spicy roasted garlic mayo. DH is stuffed and so am I

    We had pork sausage patties, along with nalysnyky (nalesniki) I made - which is a Ukrainian (Slavic) dish - pretty much basically a crepe (I make mine thicker, but not as thick as a pancake) rolled up with filling inside.
    I made the filling with dry cottage cheese, egg, lots of dill, s+p - then once filled and rolled, they are baked with a generous amount of whipping cream and butter. Then served with sour cream.
    Uh, definitely not the low-cal meal of the week!
    They also can be made sweet instead of savoury, with fruit filling, etc.

    Not sure about dinner but this is my lunch. Herb and garlic cream cheese, baby arugala, romaine lettuce, sprouts, tomatos and cucumber on a whole wheat flat bun

    Tonight its BBQ chicken wings in a gf bbq sauce from costco and our fav Greek fries (french fries backed with Greek dressing then I sprinkle feta on them and bake until semi melted MMM good!) and a tomatoe, cucumber feta salad

    tonight I am making a veggie stirfry with tofu (for the first time ) with homade stirfry sauce. Lets cross our fingers it turns out

    Going to make this fri night with my new panini press:

    Chickpea, beet and apple panini..
    Serves 4

    1 can rinsed/drained chickpeas
    3 tbs vegan mayo (will make my own)
    1 tbs lemon juice
    1 tsp chopped tarragon
    4 panini's
    1 med golden beet, peeled and sliced
    1 granny smith apple thinly sliced
    1/4 cup sprouts
    4 tbs black olive tapenade
    -----------
    Pulse chickpeas, mayo, lemon juice and tarragon in food processor(will use my magic bullet,lol) until chunky.
    spread chickpea mixture on the bottom of the 4 panini's and top with beets and apple slices. Spread the tapenade on the top of panini. Close sandwiches and spray panini press with a bit of cooking spray. Cook in panini press for 4 minutes.

    Yeah with using raw beets, I'll have to see,lol. There's also another one with avocado and spinach.
