Checked out a modern middle eastern restaurant last night.
We each got a main (grilled lamb skewer) which came with two sides of choice (sweet potato fries and rice) served with yogurt sauce
and the all you can eat soup, salad and dessert bar option!

    Oh, janetta, that's amazeballs!

Yesterday's supper was leftover chicken and potatoes for husband, plus some of the pizzas we baked - first time trying Co-op thin crust ones. Crust is awesome, but Sicilian was way too spicy for me - husband loved it. Son and I both liked the California - chicken with a ranch sauce, though a bit more flavour would have been nice. The BEST chicken ever that I've had on a frozen pizza, too!

So apparently, that wasn't enough food for the men, so son made a sandwich, and husband had like three triple-decker sammies.

Have you ever had a craving for some fine Italian food?
& would a bottle of fine Chianti help to augment the mood?

Do you know that meatballs stuffed with ricotta are very tasty indeed?
& bruschetta with olive oil & balsamic can truly fill a need?
Would you object to lots of garlic with your spaghetti Bolognese?
& when you have eggplant parmigiana, do you like extra cheese?
Would you like to start things off with Sicilian style minestrone?
& do you know that pizza is so much more than pepperoni?
How about some stuffed peppers & maybe some fried calamari?
Would you mind if I sang a few bars of that famous song volare?
Do you like fettuccini alfredo or do you prefer marinara sauce?
& if we have a radicchio salad can we include olives in the toss?
Do you like filet mignon when it is served with gorgonzola?
& do you know Italian cooking should not include granola?
Did you know that ciabatta bread can be served with vermicelli?
& don’t you adore romantic songs sung by Andrea Bocelli?
Did you know that pesto is often served with lamb?
& did you know that prosciutto what Italian cooks call ham?
Do you ever dip your biscotti into mascarpone cream?
& don’t cannoli & tiramisu belong in a splendid dream?
Wouldn’t Galliano or Sambuca be a fitting end to such fine dining?
& after such an incredible meal, do you feel like reclining?

(we are having lasagna & a garden salad. The best part is, that I don't have to do anything)

I'm craving Chunky Beef soup and rolls right from the bakery. And because I am feeling a little sick (just a little), I am going to grab some spicy hot beef jerkey to melt away any virus I might have.

Yum! Fresca to drink with it!!

Last night I mad pork chops in a white wine mushroom gravy, mashed potatoes and green beans with garlic. Tonight I'm making a honey and soy roasted chicken thigh with roasted root veggies and I'm going to try and do the potato rose. It apparently tastes like French fries, easy enough to make, so I'll let you know how it turns out, I'll take a picture.

Today I had no tomato soup, so used 3/4 can of Hunt's Thick+Rich tomato sauce (mushroom and garlic) and same amount of water.
Note: it was awesome with the above sauce, way better than with tomato soup!

    Lazy Cabbage Rolls Casserole
    (with or without meat)

1 cup rice (short grain is best, but long is okay)
    2 cups water
1 teaspoon salt, few shakes pepper
    1 Tablespoon margarine
    ----
    1 medium onion, chopped
    3 Tablespoons margarine
(option - 1 pound lean ground beef or pork)
3 cups shredded cabbage (sometimes I use 2/3 of a bag if I have it)
1 can tomato soup; 1 can water
    salt, pepper, garlic powder, dill

Cook rice the way you usually do. I nuke mine. I most often use leftover rice.
In a dutch oven, cook onion in margarine til softened. (If using ground meat, add now and cook til pink is gone.)

Add cabbage, stir around, and keep cooking and mixing maybe five minutes til it wilts a bit.
Add salt and pepper to taste; I also add several shakes of garlic powder and dill.

Put this in a 9x13 baking dish or roaster, add cooked rice and mix together well.
Add a can of tomato soup, and a can of water, and mix all together.

Cover with foil. Bake 350 degrees about 45 minutes.
Uncover, let sit 5 minutes. Mix and serve!

Tonight I made a salad of sliced cooked beets, sliced romaine, and pink grapefruit slices topped with my oil and vinegar dressing. I followed this with a warmed pita. Still on a campaign to eat healthy after the holidays.
