I'm slipping, not posting and not making anything spectacular lately. It's to hot to even think about cooking anything to heavy lately. It was another scorcher of a day..90 and not much breeze at all. So last night I crumbled up some ground beef, added tons of mixed peppers and some jalapeno peppers, diced onions, thinly sliced cabbage and brown rice. I added chili powder, cumin, s & p, roasted garlic (diced), onion powder, paprika and cayenne. I served it with a watermelon and feta salad. The salad was so refreshing and the meat & rice mixture was just right, not to heavy.

Going out for dinner to night with the girlfriends! Mommy's hitting the town. This means it is leftovers...meatballs, salmon, pasta, rice and hubby will probably make some green beans.

Don't worry Holly, I plan to order a delish salad!!! (BTW autocorrect had relish salad...ew!!!)

Yes they were done in the oven, to be honest I prefer them done in the oven. Don't get me wrong when we go out I know I eat deep fried foods but at home we pretty much never deep fry everything is done in the oven especially since my tummy cannot take alot of deep fried foods so I try to keep them to a minimum.

lunch was a tuna sandwich on homemade bread, supper will be homemade crock pot chicken rice soup with homemade biscuits. I'm going to have to get the crockpot out and make something this weekend because today and tomorrow will be the last few days of my soup I think! I have the last two containers out of the freezer and into the fridge.

Update: did not make them that night, but boiled the water today...plopped them in, and prayed none would open up in the water. They were cooperative as I gently scooped them out after 4 min. and into the pan to saute till golden and crispy on the outside. I was apprehensive as looks are not the real test...DD said they were awesome! Yes, not just " ok", not but she really really liked them ( referencing Sally Field).

Will be keeping that recipe! Check and check!!
