I think this is the first Sunday in I cannot remember how long we did not end up having pizza or chicken fingers or some other quick fix dinner. Don't know what it is, it is the one day we are all home and the hardest to cook a proper meal.

We were out this afternoon so stopped for Chinese. Won`t do that again for awhile. For some reason my stomache was upset after.

I made fried chicken, rice and veggies. I had made cabbage rolls a couple of days ago, so I reheated a few for my husband who loves these for some odd reason...

I didn't end up having leftovers like I had planned. Instead I had breakfast for supper. I had to go to shoppers to get eggs on sale and saw that hashbrowns were also on sale, so I did boiled eggs and hashbrowns with onions and a cup of coffee. Leftovers will be lunch at work tomorrow instead

Husband brought home Chinese takeout for my birthday supper yesterday, and there is tons left so that's what's for supper again tonight.

after reading a few posts on here about roast beef i bought a small one yesterday. i'll put it in the oven with some carrotts, onions and potatoes. some broccoli with cheese sauce and maybe some dempsters ovenfresh bread.
When life hands you lemons, make a lemon pie... lemonade will be all like WTH?!?

The fiance is on cooking duty tonight, which means it's beef-based something.
I know we have all the ingredients for chili, so that will probably happen. And I'll make a salad to go with it.

Last night I made fried tofu in a orange ginger sauce OMG it was fantastic! Also made what I like to call dirty Caribbean rice - basmati, with coconut milk, black beans, corn and spices YUM

topped all 4 GF pizza crusts with various things ( made mine full of mushrooms, gai lan leaves ) and they were ready to eat when DD walked in today.

Tonight will be frozen pizza and a side salad...I couldn't resist the two pizzas for $4.97 deal at No Frills since I can get 8 meals out of the two if I eat it with a salad! Can't beat 8 meals for under $1 even though I have all the ingredients to make homemade here LOL!

OH, MY!!!!
We just prepared this recipe and OH, MY is it incredible!! We had it with rice and a veg, but when we make it again, I'll serve it over buttered (lightly!) noodles!!
I just had to share it! Hope no one minds me sticking it in here.....? It was in our local paper; it's not often I see anything 'different' in there, but this one is a keeper! Good enough for company....I'd double the sauce ingredients next time so that there's more to drizzle over everything...Oh, YUM!!
CHICKEN THIGHS WITH ORANGE AND DATES
16 chicken thighs
4 tbsp olive oil
1 large cooking onion, peeled, diced
3 tbsp minced fresh ginger
2 tsp cinnamon
2 tsp cumin
zest and juice of 2 large oranges
1C chicken or vegetable stock
16 dates, chopped
juice of 2 lemons
salt to taste
Saute chicken thighs in olive oil or, simmer in 1-2 C water or stock until about ½ way done.
Remove thighs and drain stock.
Saute onions in a little olive oil and water until translucent.
In a bowl, mix together the stock, orange juice and zest and the cinnamon, ginger and cumin,
and the chopped dates.
Pour over sauteed onions, return chicken thighs to pan, cover and simmer on medium heat
for 30-40 minutes or until the temperature of the chicken is 165 degrees.
Add the lemon juice and salt to taste.
Serve over buttered noodles or rice.
(I would double the sauce!)
