    Made Crock Pot Chicken Fajitas yesterday so Mom would have dinner for tonight as she is working. So I used this to make a quesadilla with some cheddar cheese and sour cream with a Bacon, Cheddar, Ranch Salad.

    Supposed to be in the mid 40s here with the humid x and we have no AC so it has already been decided we will eat out tonight. Thinking Crabby Joe's since I just discovered there is one minutes from RCSS (how did I not know this, this restaurant is my new obsession but I just could not find excuses to go the one I thought was the closest because we never go to that area).

    Something fast that we can heat up in the microwave. Extreme heat and humidity warning in effect throughout South eastern Québec today. Thank God for central AC.

    Make a big pot of spaghetti sauce 2 nights ago. Used mild Italian sausage and a variety of peppers, onion and button mushrooms. mmm it was good. But getting tired of it, lunc will be the last time for spaghetti for awhile. I don't feel like cooking tonight but i want something yummy. So I really dont know yet...maybe order in fish & chips or chicken and chips.

    It's hell hot, so I'm not very sure. I have a pork roast I can do mostly in my pressure cooker with just a quick brown on the bbq, but that might not be the right food for today.

    Nice and cool here, but I feel for those of you who had the high temps we had last week. It sure changes both cooking and eating habits!

    Tonight, I made a huge pot of chop suey with pork loin, onions, carrots, cauliflower, broccoli stems and florets, water chestnuts, bean sprouts, celery and will serve over yellow rice.

    I have made stuffed skinless/boneless chicken and turkey breasts before but last nights version turned out very yummy! I sliced across the chicken breasts 2 times, so I would have 2 "pockets " to stuff. On the bottom layer I placed about 5-6 long green beans from the garden with 1-2 slices partially cooked bacon alongside them. Then I filled the other pocket with my dehydrated beefsteak tomatoes ( I soaked them for about 3 minutes first ) along with a handful of fresh grated Parmesan. Pressed them all around firmly into a bread crumb mixture and then wrapped 2 more slices of bacon around the outside. Baked @ 350 for about 40 minutes, turning them all over half way through cooking.
    They were a hit! It was probably the bacon!! ha ha

    Today will be even hotter than yesterday! Extreme heat and humidity warnings already in effect early this morning. I will probably make all dressed hamburgers (homemade with cheese, tomatos, onion slices, pickles, mustard, relish and lettuce) and corn on the cob.
