    hubby is working late tonite so i'm on my own for dinner. Had leftover pulled pork sandwich which i like to add some siracha to it, some cucumber sticks on the side to cool down, a pepsi and some chips

    I made (what I will call. . .) Taquitos. Chicken breasts in crockpot, topped with a combo of cream cheese, garlic, cumin, and 1/2 cup diced jalapenos. On slow for 7 hours. Shredded chicken. Used corn tortillas. Sprinkled with a bit of cheddar and the chicken mix, than rolled up in cigar like roll. Lightly fried in pan til browned and served with sour cream.
    I am ashamed to say I did not serve any vegie. I am very bad girl.

    So tonight's dinner turned out SO GOOD!

    I made a recipe I saw on The Chew. It's General Tso's Cauliflower. I was skeptical but everyone loves them including my carnivore hubby. According to my mom "that are the bomb" ( so cute from a 70 year old lady ). I served it with grilled chicken breasts that I just seasoned with S&P and I deglazed the pan with fresh chicken stock and finished with fresh squeezed orange juice to sweeten and caramelize a sauce. Thankfully I have more cauliflower so I can make it again tomorrow

    ...it's wild card weekend..........couple of great football games later. I'm making honey garlic ribs, will boil them first and then bake in the oven with my own honey garlic sauce..making rice, not sure yet if it will just be plain rice or fried rice...and I have a bunch of munchies like eggrolls, chicken balls, wong wing pineapple chicken bites, pork bites, pot stickers, etc....it's going to be good

    Not 100% sure yet, I am doing cooking for the week & the freezer so I will have Chicken Parm Soup & Potato Soup ready but I think I want to save those for during the week so I will have to come up with something else for dinner.

    Roast beef, garlic mashed potatoes, broccoli with cheese sauce, homemade buns and cesar salad. Banana cream pie for dessert and my DS, the chef is cooking!

    Easy recipe for Cauliflower.

    1 head cauliflower
    1 can Cream of Mushroom Soup (campbell`s)

    Place head of cauliflower in a large pot deep enough for the whole cauliflower. Cover with water and bring to a boil until done but not mushy.

    Bring Cream of Mushroom Soup to a boil following instructions on can but using slightly more than 1/2 can of water of milk.

    Lift cauliflower out of pot and place in a deep bowl and pour the cream of mushroom soup over the cauliflower. Serve hot!

    Dinner ended up being a Grill'em I found in the freezer that needed to be used up. I chopped up a potato and baked both in oven. No veggie instead a huge batch of baked apples for dessert.

    BBQ Pork back ribs, Baked potatoes and a veggie medley all on the BBQ. The weather has been warm enough for DH to do the grilling.

    No idea what caused the chest pains but I was so sore the next day. And then I had 2 hours of extensive dental work done. Even with massive( and I might add, AWESOME ) painkillers, I still haven't even able to eat. So just hot chocolate for me tonight.
