    ..I still haven't decided if the large amount of dishes after a jiggs/cooked dinner is worth the effort lol...but it does taste amazing and there's always lots of leftovers for the next day to make hash...hash for supper this evening!

    Tenderloin


    Ingred: 1-2 1/2 lb pork tenderloins, 1 tblsp oil, 2-3 tblsp fresh lemon, lime or orange juice., 2 tsp Italian seasoning, 1 tsp each of garlic powder, cumin, salt, chili powder, 1/2 tsp smoked paprika, 1/4 tsp black pepper.

    Place in prepared casserole dish, drizzle lemon/lime juices over the top.
    Bake for 25-30 min until outside is brown and crispy and centres are cooked through to desired doneness.
    Spoon juices over the meat and allow to rest on cutting board for 5-10 min.
    Slice into 1 inch pieces. Spoon remaining juices over the slices and garnish with fresh chopped cilantro if desired.

    I added plenty of firm fresh white mushrooms sliced up and sprinkled on the bottom of the pan, placing the meat on top of them 15 min.before the pork was done.
    Great recipe, it has been my go to for pork tenderloin when I cant use a grill!

    I am determined to use every bit of the turkey from the weekend. We had more stew last night. Tonight my wife made a skillet turkey kind of casserole. We still have enough for a couple of more sandwiches for lunch tomorrow. I made a bit too much stew so there is probably enough for another dinner tomorrow.

    This is the turkey that keeps giving. We sure have gotten our moneys worth from him.

    Ohhhhh i know keljo always lots and lots of dishes cooking jiggs dinner ..good thing always lots leftovers and it sooo darn yummmmmy ..noooo hash for me like all my veggies warm up in microwave and hot gravy on top and its finger lickin good ..then i forget about dishes ..what can fit in dishwasher goes in and rest get hand wash ..that’s enough dishes for me ..ohhhh especially cleaning cooking pot and roaster all bowls etc.huh

    Late supper and quick one ..made salad , romaine lettuce ,cut up red,orange yellow peppers , cauliflower,broccoli and to top this quick salad off roast beef and Diet Pepsi

    I am really turkeyed out but im doing the last of the stew tonight.

    We have a dishwasher but we still do most of the dishes by hand

    I’m going to surprise dh with one of his favourite meals...hes been way too busy lately!
    RoaSted garlic prime rib, onion and mushroom gravy,mashed potatoes, roasted tricolour carrots and a green goddess salad. He’s gonna be so happy❤️

    Thinking tonight I will do Pasta with Meat Sauce, probably add some mushrooms with Garlic Bread and Cesar Salad.

    Last night I made up a quick meat sauce and pasta for dinner.

    Tonight- Pork chops are in the slow cooker. Will make the boys perogies and green beans I think.

    Friday- Dinner out- we are going to a show. Teen can eat leftovers. Youngest is staying overnight at Grandma's
