Yesterday we had Homemade Chicken Fingers to try out the homemade BBQ Sauce Mom made on the weekend because we ran out of BBQ Sauce. It was a Sweet Baby Rays Copycat and pretty good.
On the side we ended up with Oven Fries and a Ceasar Salad, not my original plan but I was getting a horrible headache and just wanted to go to bed not cook dinner.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

Chicken Enchiladas with Homemade Enchilada Sauce, they will be stuffed with Cheddar Cheese, Peppers, Mushrooms and Chicken.
On the side I am thinking a mixed salad, I might trying making my own Ranch Dressing, if not I will use my Homemade Taco Salad Dressing, all depends on time come dinner time.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

DS has big plans for Wednesday for our late dinner. His first attempt at making Beef Wellington. Sides are going to be oven roasted potatoes, sauteed bell pepper strips, broiled tomatoes and steamed brussel sprouts.
Thursday it's DH turn to cook. His plan is crab cakes made from scratch, cast iron cornbread, corn on the cob....hmmm, I am seeing a theme here with DH's menu.
My turn may come on the weekend.....I've been itching to try this recipe, ( Jamie Oliver's Crazy Fish Pie. ) but had to settle on thick frozen cod pieces instead of haddock ( which is what is called for ). Just 5 ingredients!

walkonby you gave me the idea to make a chicken pot pie! I made a roast chicken the other night and we had so much left over. So thats what i made this morning for dinner tonight.
