Made a big batch of spicy vegan chilli with sweet potatoes and kale last night and since Dh had some for lunch today I need to find something else. Time to raid the freezer. Need some inspo

Quick dinner after a long day yesterday. I made buffalo chickun wraps. Soooooooooooo good. Then we went to the new local ice cream shop that just opened (the only other one we had closed 4 years ago). It’s like marble slab but it’s mixed to turn it into a soft serve swirl. They have non dairy options and it was fabulous!

The 3 of us contributed to get our " faux " Mr. Greek meal to the table. We ate dinner relatively early, but it was their first meal of the day and my last one....lol. We're still on mixed up schedules for syncing our meals atm.
I marinated the chicken, DS BBQ'd it, I mixed up the Tzatziki sauce, and my mixer made the dough, then DS rolled out the pitas and cooked them, we did the corn riblets in the Air Fryer this time, turned out even better than on the BBQ.
DH watched us....ha ha ....until we asked him make up the Caesar salad!

With the cooler rainy weather today wanted somethin comforting so we are making Lazy Lasagna with Garlic Bread.
We are out of sauce in our freezer so we used a can I picked up a few weeks ago on sale, added some cooked ground beef from the freezer and to beef it up a little some mushrooms that needed to be used.2022 is going to be my year, the year I find organization in my life and the year I focus on myself,

We have another scheduled power outage today (9am to 3 pm) (6 days in total, tomorrow is the last one!) I've already poached chicken breast this morning, so chicken salad for lunch and chicken quesadillas this evening!

Quesidias. Pulled cooked chicken, peppers from freezer. Had onion and mushrooms in fridge. Yum. Smells so good!

I did have a pre-planned dinner just for me.... all arranged, but this afternoon I tried making a new " lighter zucchini casserole " recipe ( which I naturally modified to fit what ingredients I had on hand...lol )
Anyhow, I cut the recipe in half and used a small jar of fire roasted red peppers instead of canned diced tomatoes.
It is the simplest thing to make, 2 layers of 1/4" slices of zucchini, each topped with the sauteed peppers, minced garlic and green onion, Italian Seasoning, S & P ...and CHEESE!
I only used light Swiss and fresh grated Parmesan.
It yielded me 2 very small ceramic dishes, tbh one would not be enough for a meal, but as a side dish maybe. Now I have to eliminate " something " from the 345 calorie dinner I intended to eat and slip this in! Mmmmmm
