    Tonight we made Clubhouse Sandwiches minus the Tomatoes as I was going to pick them up when I went out this week and was planning this meal for later in the week. But they were still good without the Tomatoes.

    On the side, I tried a new recipe for Garlic Parmesan Sweet Potato Fries. I can admit, it is kind of hit-and-miss when it comes to Sweet Potato Fries, especially homemade ones because they do not tend to be crisp on the outside. When you call it a fry, I have to be able to pick it up. I liked this recipe because it has a coating on the outside and it did not disappoint.

    Also made a dipping sauce using Greek Yogurt, Lime Juice, Salt, Pepper and Green Onions, it was good.

    I watched Rachael Ray this morning and suddenly felt the need to cook up one of the Prime Rib roasts in the freezer, but thank goodness cooler heads prevailed.
    There are still valid leftover items to be eaten up in the fridge so I had to cool my jets some.

    After our workout and my run I was STARVING so I made angry peanut tofu bowl with jasmines rice, lettuce, carrots, apples, purple cabbage, roasted butternut squash and roasted garlic cloves. Sooooooooooo good!

    Potatoes were sprouted badly and the turkey needs to be thawed for 24hours first so soup and sandwiches.
    Split pea and lentil soup with chipotle cheddar gardein chickun wraps.

    I am making DS chicken fried rice. Leftover rice from the other day and cooked chicken from the freezer. Slowly cleaning out the freezer!

    DH mentioned a few times now that he wants to start eating healthier, so skl/bnl herb coated chx breasts are just about done in the air fryer. I'll steam some fresh green beans and serve coleslaw as sides.

    Tonight is Breakfast for Dinner, I was going to make Waffles and serve it was some of the bacon I cooked on the weekend. Mom said she would prefer Eggs and Bacon so that is what we having now with Shredded Potatoes.

    Going to try a new recipe tonight Dutch Oven Chicken Breasts and Vegetables. Originally I thought it has Potatoes in it, but it does not it is just Chicken, Mushrooms & Carrots so I will serve it over Mashed Potatoes.
