    make a broth with the ham bone from last week then i'm going to use the broth for a chickpea and bell peppers soup. Bell peppers are currently on sale for $1.44/lb and I have 1/2 a bag of dry chickpea.
    honey dew melon is also on sale this week $2.44/each

    This morning I made a soup! Started with sautéing onions and celery leaves in the large pressure cooking pot with plenty of the ribs diced up.
    Oven roasted flat slices of both carrot and sweet potato, sauteed a full package of the Marc Angelo pork Souvlaki meat in the cast iron pan adding
    red wine to deglaze, added the meat, the roasted veggies along with 3 cartons of beef broth into the large pot. Added 1 package of Uncle Bens Ready
    Rice ( the one with Cilantro and lime ) for a bit more carbs. Whisked in a full cup of plain Greek yogurt. Mmmm, simmer and enjoy!

    bought some sale PC frozen puff pastry $1.50 and breakfast sausages 900g pack for $5.05. Already cooked the sausages. Going to make breakfast puff pastry later today with those 2 ingredients and the shredded cooked ham & provolone leftover.

    Cooked up 2 burger patties and 3lbs of lean beef into taco meat. The kid should be happy and full for a day or so....

    conversation in the vehicle after picking up the large PC Express order.

    DS: are you guys hungry? DH: I could eat.....ME: no I'm good and there's still roast beef at home that I cooked up.
    DS: could we swing by Popeye's? DH: pulls a U-turn, No problem!
    Once at home DH sets out 3 dinner plates at the dining room table....DS says Mom, what would you like to drink?
    Grrrr....I was tricked into joining them, but tbh my gawd were the 2 wings I had ever delicious! Dipped in Honey Mustard sauce.
    A handful of their seasoned fries and we'll call that my dinner. Bottle of water to wash it all down with.

    I'll try to eat healthier tomorrow.

    I finally got around to making a large deep casserole of lasagna so I could portion out individual servings to freeze. ( for me to have during my recovery after surgery. ) I put 6 of them in the basement freezer, the rest the guys can fight over....there was lots left.
    As usual there was excess meat sauce, so later this afternoon I plan to make a double batch of Stanley Tucci's Pastina Classica dish.
    I'll fold in that meat mixture, maybe add some lightly sauteed green onions to it. Might freeze a few portions of that too.

    The Stanley Tucci pasta mixture is done and I also tossed in almost an entire head of broccoli. I used just the crowns chopped up small. This is going to go far!
    I'll start portioning and freezing in a couple of hours.

    we're going to Costco for dinner.
    we've found the "slow" time at Costco is after dinner on a weekday, so we're gonna do a bit of shopping then head to the food court

    Yesterday's lunch was later and larger so that was also dinner. So I used up the remaining hot dog buns and made bbq tofu sandwiches loaded with pickles, hot peppers, cheeze, guacamole and lettuce. Sooooo good I’m actually craving it and it’s only 10:30am

    Does anyone know how to make fully cooked sausage ring more soft in pasta? I have tried cutting up the sausage into round discs, pan fried them with bell peppers, then add tomato sauce and seasoning for a pasta dish. Every time, the cooked sausage were harder and a bit tough to chew.


    another dish that I make with the sausage is pan fried the discs with onions then add boiled perogies
