I guess this will be postponed until tomorrow night. Dh wasn't feeling very good when he got home from work. LO is having a strawberry fruit smoothie and toasted bagel. I'm having an open faced tuna salad sandwich on a toasted sesame seed bagel with a glass of milk. LO mixed up a bowl of butterscotch pudding for later.

Now that it's made and eaten, I need to tell you about how FAB these potatoes were - sometimes experiments are totally worth it!
I had cubed up some russets - maybe six medium, 1/2 cup diced onion, and there was about 3/4 of a cup of KFC colslaw left. I mixed these up, added salt, a bit of garlic powder, and maybe 2T oil. Put in 400 degree oven. Checked at 20 minutes and turned them over, put in for another 15 minutes at 300 degrees - I had lowered the oven temp so I could heat up the chicken.
Well, those coleslaw bits got carmelized and together with the onions, made the potatoes taste absolutely yummy since they got coated with them!
Just proves that sometimes recipes don't matter and you can never tell what goes with what til you try.

It's pre-Christmas fasting, so we're aiming for two meatless meals a week.
Spaghetti and sauce - Hunt's thick 'n rich garlic and herb is pretty decent when I don't have homemade.

..still deciding...had leftovers yesterday...have a ceasar salad kit waiting in the fridge...might sear a steak on the stove and finish it in the oven with mushrooms & onion..or if I can brave the cold outside I might pick up some chicken....see how the afternoon develops ..
