Someone asked that I share the recipe for potato soup. It's kind of easy!
Scrub enough potatoes to half fill your crock pot (peel them if you don't like peels, I leave them on). Add a tablespoon or two of minced garlic, half a large onion, and add enough chicken broth to cover the potatoes. Turn your crock pot on low, cook until potatoes are tender (I turned mine on about 6:45 this morning, got home around 5-ish, was perfectly fine).
Gently mash your potatoes a bit in the crock pot, and you can leave them lumpy or you can follow your initial squashing with an immersion blender to make it smooth (that's what I do). Now add about a cup of shredded cheddar, a couple dollops of herb/garlic cream cheese or cooking creme, stir it in and leave it for 20 minute or so to let it melt. Add enough milk to thin to make it as thick or thin as you want. It will thicken more the next day I find.

Last night, too hot to cook, so we got rotisserie chicken meals from Sobey's - chicken, salad and buns for $10. Got two and froze one chicken for another time.

My friend just gave me a fresh batch of tequila lime butter, so I'm thinking corn on the cob and steamed broccoli with the butter and maybe tilapia or salmon, whatever one I have in my freezer.

tonight will be butter and herb rice with col shrimp and mixed veggies. It's getting too cold out so thought I better eat up the shrimp rings I bought to do on nights it was too hot to cook anything since that never happened LOL!

last night was turkey meatballs in sweet and sour sauce, whole wheat no yolk noodles, corn. tonight was turkey tacos for the kids, I had sautéed zucchini, onions and mushrooms with teriyaki sauce over rice noodles.
When life hands you lemons, make a lemon pie... lemonade will be all like WTH?!?

Cold and rainy today-so oven baked country style ribs with BBQ sauce, baked yam and steamed cauliflower-ice cream for dessert.

Leftover potato leek soup. Tomorrow will be NY strip steak on the bbq, corn, salad and most likely roasted taters. Sunday will be something with chick thighs I just need to decide on what

This afternoon I made some fresh pasta sauce while LO had his afternoon nap. I put some into small ziploc freezer bags and place them in an icecream pail. I have made freezer pasta sauce some other years, and I thought the icecream pail would help to protect the sauce from getting banged around in the freezer. This heat is making my tomatoes ripen quickly. I gave away 11 tomatoes earlier in the week and used 15 more tomatoes in this batch of sauce. I don't have a food processor, so I do it all by hand. The pasta sauce is 1 celery heart (from Sobeys BOGO sale), 2 onions ($0.30/lb), plus my 15 garden tomatoes. Makes for some cheap chunky pasta sauce. I think I'll have enough tomatoes next week to do another batch. The next batch I plan on adding raw cooked garlic to it and using my immersion blender to make it less chunky.
Tonight's supper was some of the fresh pasta sauce with penne pasta with garlic powder, grated mozzarella, Schneider's sausage, and a glass of milk.Help me out with Swagbucks and we can both earn gift cards and PayPal money

This is my last weekend in NFLD--8 weeks gone already!! It has been a blast. I'm sure I gained at least 5 lbs from all the wonderful, homemade food!!LOL . Will miss it all for sure; especially the fresh cod! So tonight/this evening there is a big party, there will be tons of food. The main will be the traditional Jiggs dinner pot, with lots of roasts, gravy, blueberry pudding (and off course peas pudding), cabbage, turnip, carrot, salt beef, potatoes, etc ..maybe a few card games, most likely a beach fire later on...(hopefully there is lots of beer to go with the salt beef!!ha ha)

I have the ribs in the stove with apple juice.. and then I will put the 40 Creek BBQ sauce I made on them, and cook them up on the BBQ..

We had baked chicken thighs, sweet potato fries I bought at Costco earlier on sale (OK, not fabulous), and a veggie mixture of broccoli, mushrooms, onions, zucchini, carrot. DS had leftover potato soup and a ham/cheese sandwich.
