Tonight was BURGER night again!! But they were awesome!! I made my own beef patties as big as I could fit/shape in my hand, they were huge! (but a size safe enough for grilling) I cooked balsamic sweet onions on the side burner and bacon, melted goat cheese on the burger when they were done, put on a toasted bun with lettuce & tomato. Really good with the goat cheese and balsamic onions!! With it I had a garden salad and DH also had corn on the cob (also cooked on the BBQ)

So yesterday I stared at the package of ground beef and honestly was gah, I'm sick of everything I make with this - and got no inspiration online.
Looked in the fridge for magic and that helped a bit - found some sauerkraut and grated Swiss cheese mix I wasn't sure what I would do with.
Ended up being creative casserole time. I sliced potatoes thinly, mixed with a bit of oil and assorted seasonings, put in bottom of 9X13 and let crust up. Flipped them over and added -
Sauteed the ground beef with onions, garlic, mushrooms and sauerkraut. Put this overtop of the potatoes.
Was worried it would be dry, so poured some milk over (? shoulda made a sauce maybe)
Used 3/4 of bag of cheese over top, covered and baked about 1/2 hour.
Uncovered, to let cheese brown.
Well, let me tell you it was magnifique! Tasted very different than what I would usually make because of the sauerkraut and swiss, cheddar, parm cheese mix, but it was a hit.
We had it with a huge-O salad full of whatever I could find - romaine, spinach, broccoli, cauliflower, onions, cucumber and carrots.

even though it's 30+ degrees outside and we don't have a/c I have a turkey in the oven. I pulled it out last week to cook for this week without thinking how hot it was going to be. on the up side, it smells heavenly in here. I put some potatoes in the crock pot with some reduced sodium chicken stock for mashed potatoes. i'll make corn and gravy later. oh, and stuffing in the turkey! cant forget the stuffing

It's hell hot here. I bought a rotisserie chicken and some potato salad at Costco last night (potato salad was $5 for a giant tub), so we're having leftovers of that tonight. DS wanted salmon, so I did cook that on the stovetop for him.

cut up a red, green, and orange pepper, and a bunch of broccoli, and then steamed it. mixed with my healthy lower-fat Alfredo, and tossed with fettuccine. I feel like we just had this, but it must have been three weeks ago.

homemade pita pizza with pepperoni, mushrooms, and old cheese. It was supposed to have peppers on it too but no frills wanted 2.97/lb for peppers which is crazy! I miss having a garden. Next year for sure one is happening on my balcony!
