    Lots of cooking today - I'll be making homemade chicken soup, then from the meat, chicken stew.
    Son is coming over for supper, yippee! He's been sick, so hopefully the soup will help him, and chicken stew is his fave. I'm making lots, so there will be plenty for him to take home, along with some baking.

    I'm going to the cabin today so whatever I can cook on a wood stove, so I might try a pot of beef stew or peas soup, haven't decided yet- the stew would prob be easier..(with dumplings!)

    It’s meatball Monday here in my abode,
    I just hope my meatballs are up to code,
    Into the crock pot as they’ve been nicely browned,

    Do you ever buy chicken that has been ground?
    Sweet & sour sauce with a little bit of zing,
    Hopefully so yummy that they’ll make us sing,
    I’ll serve them up on a bed of egg noodles,
    If the family doesn’t like them, they can open a can of zoodles,
    A tasty spinach salad to serve as a side,
    Its Monday kids just take it in stride.

    Well despite the -18 temp I served a chicken ceasar salad for dinner and they all ate it-nobody complained about the lack of hot food.

    I have chicken thighs in my fridge, what should I do with them for tomorrow's supper? Our standard is baked with Italian bread crumbs on the outside. I'm thinking a pasta, anyone have a good chicken pasta idea?

    Zonny:

    I made chicken/pasta casseroles on the weekend to freeze (3 of them) because whole chickens were on sale for $2 a pound.


    Pretty easy to make: cut up 1 of each: green pepper, red pepper, zucchini. Mix in with 2 cans crushed tomatoes, 1 can whole tomatoes. Season to taste (I used 1 whole garlic, salt, pepper, some packaged Italian seasoning)

    Cut up pre-cooked chicken.

    Boil 1.5 boxes of rotini pasta. Drain pasta. Divide into 3 small baking dishes (I used foil cake pans). Layer chicken and tomato/veggie combo over top. Cover with cheese if desired, and bake in the oven until the cheese is melted (the rest should already be hot.

    So good!

    That one chicken made 3 dinners for 3 adults, and there will probably be some for lunches as well.

    Tonight will be baked potato soup, I have the base which was cooked in the crock pot over the weekend in the fridge waiting for me, just need to reheat it add the last two ingredients and dinner will be ready. I love quick and simple meals where I can have dinner on the table in under 30 minutes.

    Didn't put chicken in the crockpot this morning as that was my plan so that will be tomorrow nights dinner. Will prep it tonight. Will make the kids fish and fries tonight I think- Pull from the freezer.

    Tonight will be leftover chicken noodle soup, and leftover chicken stew. Will make some coleslaw and garlic toast to go with.

    Thanks for the idea! Might try that next time. I ended up going with the standby, baked chicken. But I think that I might try something with some of the cooked chicken. I've been seeing ads about Carnation white sauce on TV, that might work for what I'm thinking. I never use canned milk, but I'm thinking a roux using the evaporated milk, and add some curry powder and put in some cooked chicken and pasta. Might work!

    Tonight - there are leftover mashed potatoes, so I'll saute those with onion, have baked ham sausage, and a salad.
    Boring, yes, but I have to keep it simple because my sore back is still an owie.
