What's For Dinner?

Chicken and cheese enchiladas. I made green sauce which was 6 tomatillos, 1 poblano, 1 jalapeño, 2 cloves garlic (roasted and puréed with lime juice, chicken stock, cilantro, sugar, s/p). Chicken was roasted, shredded and mixed with a bit of chipotle pepper power, and lots of cheese. All rolled up in corn tortillas. Served with shredded iceberg lettuce, sliced avocados, sour cream, and hot sauce. They were fabulous, none for leftovers hubby said I should have made more. Have some leftover sauce I'll freeze for next time.

I make something similar. I put chicken thighs in my crockpot with salsa, black beans and taco seasoning. Take chicken out and shred, mix in some refried beans and rolled up in tortillas and bake.

Have a cold today and don't feel like cooking so ordered in pizza, wings and bread sticks!

Angel hair pasta with feta, black olives, grape tomato and a drizzle of extra virgin olive oil. Date cake for dessert.

We had leftovers to use up. DS had a cheeseburger, DH and I had pork chops with potatoes and carrots.

I had such a horrible headache that in my dream I was also experiencing the extreme pain and it woke me up at 5am. I guess it's all the stress of the last 2 weeks ( FIL and his fall/surgery and a very dear friend was diagnosed with cancer that spread everywhere and now 1.5 weeks lateris in a coma ) so tonight was Wendy's.

I am hoping to feel good enough tomorrow to enjoy the Super Bowl feast my mom has planned

Hope you feel better and everything in your life can get back to normal. So sorry to hear about your friend, cancer is awful.

Last night mom made herself chili which I do not eat especially since she got a little happy with the spices and I cannot handle anything spicy. So Mom had chili and I had BBQ Pulled Pork from the freezer over leftover mashed potatoes.

Time to figure out something for today, thinking something comforting and warm is in order because every where you look right now it is white. I am so over snow.

It's Super Bowl Sunday!! ..I'm pretty sure chili will be on the menu; and all the other finger foods, dips, etc... pizza and beer.

Yup! Super Bowl Sunday. Hubby is ordering all-dressed pizza (pepperoni, green peppers, mushrooms, bacon and lots and lots of mozza cheese. im not a pizza lover (i must be the only one on the planet) so i dont know what i will have

I'm doing those enchiladas I talked about the other day since I have boatloads of salsa and found tortillas on sale at Costco earlier (15 large Dempsters tortillas for $2.24). No football here, but we did celebrate by having some nachos a bit ago!

Last night was Perogie (which I have been craving for weeks but every time they were suggested I was shot down) with Grill'em sausages.

Tonight I took out "homemade" pasta sauce we had in the freezer almost with some frozen potato rolls. Just have to bake the rolls, cook some pasta and heat up the sauce and I have dinner.
