    Kay... Tried something new in order to use up some bok choy that was on its last days.... Doesn't look too appetizing but it was fairly good!! I just put a bit too much on.

    Dinner-- spagetti squash tosses in bok choy pesto. Crispy pan fried soft tofu.

    Desert-- vegan Chocolate brownie with a tofu raspberry sorbet I made this morning!!

    my stomach was upset tonight so I skipped dinner, dh is on afternoons so he's not around this week. I made the girls mushroom soup (their favourite) and a mini ham and cheese sandwich.

    Thank god ... My mom shipped over some meatballs .. I was soooooo exhausted from work and running from doctor appointments to health offices at work that DF just whipped up some corn for DD and I and he had his meatballs with leftover pasta ..

    Tonight it was very hot and lots of company before dinner so no time to cook. We had leftovers and nacho chips with melted cheese, guacamole, sour cream and salsa-the kids wolfed it down. Oh and ice cream for dessert! They thought they had died and gone to heaven!!

    invited out for dinner tonight, they are having something called 7-Layer dinner , so something new to try!! apparently its like a casserole and has sausage, potatoes, peas, rice, onion, (I am not sure what the other 2 items are!!! LOL) I'm bringing the wine.

    hubby's getting a slow cooked lamb shank curry tonight with naan.

    i simmered it for about 3 hours yesterday.

    the girl and I will be having leftover beef from yesterday, maybe with some glazed carrots.

    the boy will have PB sandwiches or something, because he is a picky little monster

    I ended up making "upscale " slapdowns they were fast,easy and delish!

    I'm thinking potatoe leek soup tonight. It's cold and wet here and today is a much calmer day (thank goodness !!!)

    That is the name my dad gave to the sammies that he grilled in the George Foreman grill. It's his version of a Panini I made fancy ones by making a brie cheese, Indian chutney(from MIL) and toasted pecans and the other one was ham, maple bacon, baby arugula and swiss cheese with a Louisiana hot sauce mayo ETA: Dad called them "slapdowns" cause he slapped them down on the grill

    Tonight was a type of taco? Lol.
    Homemade naan with ground Jamaican jerk pork. Topped with an overnight black bean and corn salsa and sriracha. Roasted veggies on side (beets, carrots, broccoli,zucchini).

    For desert vegan chocolate pudding from scratch with fresh raspberries.

    For Alicia. Hopefully you see this because I can't access your profile for some reason. The vegan pudding goes like this...

    1 package of sunrise soft tofu (300g)
    1/4 cup cocoa powder
    2 tbsp almond milk (or soy)
    3 tbsp cornstarch

    I throw everything in a blender and whip it for a few seconds. Then throw into a saucepan on medium heat. Continuously stir the pudding until it starts thickening up, make sure to scrape bottom of pot during stirring as well. After about 4 to 5 minutes I transfer it into a bowl. It may be lumpy so just take a wire whisk and stir until the lumps are gone. Let cool and enjoy!!

    The longer you leave it sit the less tofu tasting and more chocolatey it gets!! You can also add a quarter cup of sugar to the saucepan while its cooking. I liked pudding non sweet. Lol.
