So far the 2 week meal plan is going well. Last night was the bean burgers, tonight was stuffed pepers and I prepped the ribs for tomorrow including making the rub and bbq sauce from scratch This is alot easier than I thought

Lasagna that not everyone is going to like as I have ricotta cheese haters & vegetarians in this house & I made this one with both.
You can't always please everyone.
I'm looking for one of these lasagna pans to solve my lasagna woes. I've seen them online, but not in stores.....anyone know if they are sold here anywhere?

I don't know what I am making for supper tonight.
A friend of ours gave us 2 cases of tomatoes a few weeks back. We ate what we could and then I simply fixed them up and put them into the freezer whole. I am now starting to prepare them and freeze them in freezer bags. I have a big pot of tomatoes (skin off) cooking up on the stove. There is a lot of tomatoe juice from them which I have ladled out and placed in a container. The current pot of tomatoes is currently being simmerd down just to have plain tomatoe sauce in the freezer. I will make another big pot full of tomatoes into pasta sauce to freeze.
The question is...what should I do with all this tomatoe juice?
I can only drink so much of it.

Make a vegetable soup! That's what I'd do. Add tomato paste, carrots, celery, onions and even meats, potatoes and/or rice/pasta...Mmmm perfect for this chilly weather!
That's an awesome pan! Sorry, don't know where to buy them but I suppose you could always use loaf pans to make separate lasagnas?

I've never seen that lasagne pan, either - it's cool!
Angela, the suggestion for soup is great. When I had lots of tomatoes, I made them all into sauce.
Last night - takeout pizza for supper!
Tonight - leftover soup and sandwiches.

I am presently making pull pork on my Big green egg! Its cooking low and slow and I am also smoking it with apple and maple wood chips!
I used ragging river from dizzy pig spices for rub and the following for injection:
Pork injection
3/4 cup apple juice
1/2 cup water
1/2 cup sugar
1/4 cup salt
2 tablespoons Worcestershire

for dinner tonight we had homemade chili and homemade quiche...even made the pie crust myself...first time trying the recipe from cooks.com and it quite nice. finished it off with another slice of McCains chocolate cake...free from CT scratch card promo. Umm Umm good!

I made up a pasta dish...
cheese roux sauce with mushrooms, onions, bacon and chicken with chipolte and Italian herbs over penne .
It was PDG for a "Eeek! i don't have anything for supper!" meal.
