When I realized I had 5 peppers in the fridge I decided we should have stuffed peppers-never made those before. DH wolfed down 2 with hot sauce, I had 1 and DD had a frozen chicken cordon bleu-she is not big on veggies-when she announced a few months ago that she was going to be a vegetarian I knew that wouldn't last long-3 weeks to be exact!

Chinese take out. DH had a couple of dinners for 1 for himself while I just had war wonton soup.

I make something similar, but never thought of adding some curry powder to the dressing! I use raw sunflower seeds, regular thin sliced onion and grapes; never seem to have bacon handy!
It's so simple, yet so yummy! Tastes even better the second day, but I rarely have leftovers!

Went out for a day of shopping for my bday so we also went out to dinner. Went to South Street Burger for Burgers. We have two of them "locally" one is really good the other one not so much. We went to the good location.

What a great evening and dinner we had at MIL--there was so much food...honey glazed ham, all kinds of salads & sides & desserts...took it easy on the wine today!! ha ha (learned my lesson this morning! lol...ouch, that hurt! )..so just one more day of food tomorrow and then its back home..

Hoping all of you have a wonderful Easter meal! I'm jealous.... but then again I've got lots to look forward to for our Easter on May 5.
Tonight for supper we'll be having roasted honey garlic chicken thighs, with rice - the only way my husband and son like rice is if it's smothered with something else, so I'll sautee onions, carrots, celery, broccoli, and cauliflower in a broth to mix in the rice. Plus we'll have salad with a sweet dressing, because it goes perfectly with the meal.
Yay, they won't realize how many veggies they actually consumed, lol!

Again I cannot resist with another dessert picture. I made a chocolate chip cheese - cake. The recipe will follow the photos.

Chocolate Chip Cheese - Cake
- 3 eggs
- 1 cup sugar
- 2 rolls of Chunky Chocolate Chip Cookie Dough (Pillsbury)
- 2 bricks of Philly Cream Cheese
Pre-heat your oven to 350F
- Mix cream cheese and sugar until smooth. Add eggs one at a time, mixing lightly.
- Crumble one of the cookie dough packages into a lasagna/baking dish.
- Pour cream cheese mixture over top of the cookie dough.
- Crumble the second cookie dough package.
- Bake for an hour to an hour+15 minutes until centre comes out crumbly.
NOTE: This is a heavy dessert. When serving a small square is plenty! Over the years I have experimented with variations on this dessert. I have reduced the sugar to 3/4 cup, used one package of cookie dough, with low fat cream cheese bricks.Dropbox Referral Link Here

Easter supper tonight, with blueberry pie for dessert. The only two items I didn't have was the buns and the marinated vegetable salad. There was also a blueberry salad made with jello.

I am a little glad Easter is almost over; it has been crazy hectic..so much travelling, but it was worth it to see everyone, Today was a turkey dinner (with more wine!! ha ha) I am gonna have to add at least another 20+mins to my daily walks this week..lol..

I am almost sick of eating after the Easter marathon of food..lol..but will no doubt be hungry by suppertime..lol..I have some bone-in chicken breast with skin, usually these are great on the BBQ (with the skin removed to avoid flare-ups) but I came across this awesome oven recipe. Preheat the over to 350 deg, mix 1 tablespoon each of sage, garlic powder, salt and pepper (I would never use this much salt or pepper) so just use normal amount of salt if any. Pour olive oil over the chicken and rub in and then sprinkle the seasoning mix all over the chicken and rub that in (I usually sprinkle on extra sage) bake skin down in a covered dish or cover with aluminium foil for approx 25 min, then turn and bake uncovered until the skin is really brown and crispy i.e. maybe 45 mins or until done..at this point you can eat as is or remove the skin according to diet requirements..the meat is still really moist and flavorful..
