Spaghetti with almost homemade tomato sauce and pork meatballs tonight. For that something green, hopefully a Caesar salad if someone goes shopping today!

All the family is coming for brunch this morning so i have been cooking up a storm!We are having pancakes, sausage, bacon, hasbrowns, fresh fruit with kahlua dip and wifesaver casserole.I made cherry cheesecake bars, cream puffs and Rice Krispie Easter nests for the little ones. Looking forward to everyone being together and relaxing with family for the rest of the day.tomorrow will be a traditional ham supper with all the trimmings. Not dieting this weekend!!

My head hurts today!! ha ha..Our big fish fry went great yesterday, there was so much food and it was all awesome. The wine tasted really good too..Now I have to do it all over today and going out for dinner..ham, salads, etc. I am bringing my own homemade nacho/taco dip as an appetizer and bringing a bought cake from the store as a dessert...

Freshco had reduced chicken thighs (veggie grain fed) on Thursday.
It has been marinating in the 'fridge since last night:
Mrs. Dash, herbs, onion flakes, garlic powder, low sodium soy sauce, Worcesteshire sauce
It will be served with brown basmati rice that is cooked in no salt chicken broth

I'm cooking a roast beef tonight (won't be ready until for tonight's supper, is mostly for the next few days). DS was very sick with a stomach ailment over the past week (but is on the road to recovery thank God), and we weren't planning a big Easter meal for the three of us anyhow. I used to be all about the traditional holiday meal (turkey, ham, etc.), but I've gotten past that. I've been known to barbeque steak for Easter!

My Mom is recovering from surgery so we are "meals on wheels" tomorrow, so to speak. She can't easily travel so we are taking a whole chicken to roast, broccoli salad, potatoes, homemade bread and carrot cake! I was over in their neck of the woods earlier today so I made the carrot cake and my Dad said he old ice it once it cooled down.
