    Last night was BBQ Pulled Pork from the freezer over Mashed Potatoes with Slices of Homemade Ciabatte. There was also supposed to be roasted corn but I forgot to cook it opps.

    Tonight is date night so he is making something. Pasta for sure but asked to use up freezer stuff before buying so Shrimp and Spinach will be part of it. Can't wait to see what he creates

    Hot dogs with leftover roasted veggies, so not what I had planned but before I knew it was quarter to six and I had not started dinner so dinner needed to be quick.

    Didn't feel much like eating - tried an orange.... no, it tasted grapefruity; had 1/2 an asian pear, then later egg in a hole.
    Husband had four or five liverwurst sandwiches.

    Chicken and cheese enchiladas. I made green sauce which was 6 tomatillos, 1 poblano, 1 jalapeño, 2 cloves garlic (roasted and puréed with lime juice, chicken stock, cilantro, sugar, s/p). Chicken was roasted, shredded and mixed with a bit of chipotle pepper power, and lots of cheese. All rolled up in corn tortillas. Served with shredded iceberg lettuce, sliced avocados, sour cream, and hot sauce. They were fabulous, none for leftovers hubby said I should have made more. Have some leftover sauce I'll freeze for next time.
