I made broth from pork ribs, then made soup with barley, rice, peas, onions, celery, shell pasta and lots of dill.
Marinated the ribs all day, roasted them in a tangy tomato based sauce with lots of garlic and horseradish, served with potatoes roasted with onions and mushrooms.
Everyone wanted to have lots of soup, so didn't have much of the main meal - husband ate 1/2 pot of soup, so he'll have his as leftovers tomorrow.

Tonight I am planning on making a beef broccoli stir-fry with rice. This will be my first time making this. Hope it's nice and tasty.

I took out some frozen chicken breast, so once they thaw out I'm going to pound them out and stuff with cheese, spinach & mushrooms and bake in the oven; maybe top with tomato sauce & cheese and will prob just have some rice to go with it and sautéed carrots....

I went back to work today, but I'm still kind of sick. I'm MUCH better than last week, but still coughing and have a stuffy nose. So I'm making some soup tonight; chicken thighs, frozen spinach (love the ones that come in small frozen pieces now), and a pack of stirfry veggies like carrots, broccoli, peas, etc. Will add noodles later.
Am I a whack job for being mad about paying more than I could have for chicken broth? I had one carton in my cupboard, but have a plan for potato soup in the crockpot tomorrow for supper. Costco has packs of six Campbell's chicken broth cartons on sale right now, comes out to $1.29 a carton. But I'm just not up to it, couldn't get to Costco tonight, had to buy a carton at Sobeys on 'sale' for $2.49! I will still buy them later, I use broth a fair bit and I <3 soup.

Husband had leftover ribs and potato mix for supper, plus leftover barley soup.
I had baked potato, broccoli, Caesar salad, and a bit of roasted chicken breast.

I don't have to cook until Sunday!!! YAY!... Well, not really. DH is in TO for business so since it's just me and Harley(and he only eats his dog food and salad) I doubt I'll be in the kitchen much. He left this morning and I already miss him I am thinking of a full on roast dinner for his return on Sunday

I think we'll have a quiche tonight. I also fancy a spinach salad.

I put potatoes in my crockpot this morning and we just finished delicious potato soup. Just potatoes, chicken broth, garlic, onion in the crockpot, then when it's cooked put it in the blender, back to the pot and add shredded cheese, cream cheese, milk. Nom nom nom!
