DH was out tonight, and since DS loved those inexpensive Italian sausages so much, we had rigatoni with tomato sauce and cheap sausage again. The pack of 10 frozen ones was marked over $10 regular price, I got them for $3.97 - but can't imagine someone would pay $1 per sausage? Anyhow, we hardly ever buy sausage, but went through them all since Saturday! They were VERY lean, I was kind of surprised, hardly any fat came out.
Tonight I cooked a pork roast for the next couple of days, a part of the big pork loin I bought at Costco recently and divided up. Baked it slowly, rubbed with salt and pepper, minced garlic, dried onion, dry mustard and olive oil. There wasn't much for drippings, but made a bit of gravy out of what came from it. Had to sample it (quality control you know!), seemed very tender.
It's March Break here, and for tomorrow we're going to a pub with cheap burgers with DS after work and his camp, then off to a museum after for a special Australian display.

Tonight I had chicken strips, fries, and Caesar salad. Husband had dry boneless ribs and bread.

Today, I'm making barley soup with the rib broth from Sunday - not sure which veggies I have, but for sure, with onions, carrots, potato - we seem to have 'lost' a new bag of frozen peas, really odd....
To go with, I'm making chorizo rolls - don't know why they are called that, because they aren't that spicy, but it's basically a rich biscuit dough, spread with ground pork mixture, cut like cinnamon buns and bake. SO good! Recipe from Company's Coming cookbook - which I had to dig out of a box this morning, lol!

I made a huge salad that was loaded with cherry tomatoes, zucchini, green onions, carrots, pea shoots, strawberries, mango, pears, and fresh mint. I served it with chicken breast that was kinda poached in a mixture of soy sauce,garlic,sambal olek, Thai chilli sauce and chicken stock.
I used the reduced sauce as a warm dressing while dh used jalapeño ranch dressing. Super yummy

During Lent, we are meatless both Wednesday and Friday, instead of just Friday, so I just don't know what's up yet for tonight...

Well today the love of my life wanted to try some Bacon Cheeseburger Egg Rolls on the grill. So I did some research and came up with my variation of recipe. These are a little time consuming in making but are worth the time and effort! This can be a little difficult in making! you can cook this on a wok on stove as well!

Another big salad night This time I added French beans and made a kinda vinegrette using my MIL's spicy tomato chutney, white wine vinegar, lea&perrings,soy sauce,touch of honey and evoo. It was super yummy and had a nice spicy kick I served it with a grilled steak that was slathered in evoo,Mexican hot sauce and s&p

Keeping it simple on myself today because I have a bit of a flooey bug, nothing serious, just have felt icky for a few days.
Tonight, all in a roaster - chicken legs/backs, carrots, potatoes, onions, garlic - Italian seasoning, will thicken the juices once roasted.

BBQ'd chicken (DH cut up a whole chicken and it's marinating in garlic, vinegar and BBQ sauce) and foil packs of veggies( onions, potatoes ,mushrooms and peppers) done on the grill.
