About ten minutes before DS and I headed out the door this morning I thought hmm, do I want to make potato soup for supper tonight? Turns out I did, five minutes later everything was assembled in the crockpot and cooking. I <3 the crockpot! When I got home, mashed it up a bit and then dipped in my immersion blender to make it smooth. Add shredded cheese, a glob of cream cheese, stir in some milk and dinner is served! I cooked a bit of bacon to put on top. DS even asked for seconds!

I also prepared the dinner early this morning cooking 4 skinless boneless breasts in my cast iron pan using a small bit of coconut oil to coat the pan as I was too lazy to make a trip to the pantry for canola. Sprinkled rosemary, parsley, cilantro, pepper, onion powder and paprika on each side once the browning had occurred. Then finished them with a brush of my GF steak sauce ( tastes a bit like a bbq sauce) Did up the last 2 breasts coated with crumbs and baked. Boiled carrots and cabbage sides. Boiled up 10 eggs that became egg salad eventually. The guys were torn between taking egg salad sammies or chicken for lunch!! lol.
