On Sunday my DD and I baked banana bread and zucchini muffins. She hates zucchini but is always asking for these. And they're loaded with zucchini.
Oh and we also used up her last package of cake pop mix for her cake pop maker. I'm hoping they haven't discontinued these yet as she's already asking for more for Christmas.

I'm thinking about buying a pumpkin to bake and puree for baking. I want to use it as a healthy oil/butter substitute while baking, but I know that I am not a fan of the taste of pumpkin. Could anyone please tell me about your experience when using pumpkin in baking? Does it always make your food taste like pumpkin?

Our 3yr old son loves to bake and measure with me. This week we made puffed wheat squares and they were gone within 3 days. I found this awesome recipe for oatmeal chocolate chip squares that we made two Fridays in a row because I loved it so much. They are fairly dense and somewhat like a breakfast square. Here's the recipe. I want to try a healthy butter alternative in this recipe to make it that much healthier for us. Possibilities include mashed bananas, unsweetened apple sauce, or pumpkin puree. I don't really want to change the flavour of the squares, so I'm thinking about trying it with apple sauce.
Oatmeal Chip Squares
¾ cup brown sugar
¾ cup sugar
1 cup butter
1 tsp vanilla
2 tsp cinnamon
2 eggs
1 ½ cup flour
1 tsp baking soda
1 tsp salt
3 cups rolled oats
1 cup chocolate chips
1 cup raisins or dried cranberries
1 cup nuts
Cream together sugars with butter. Add vanilla, cinnamon, and eggs. Beat until smooth. In separate bowl sift together the flour, baking soda, and salt. Then stir in oats. Add sugar/butter mixture to dry ingredients and stir well. Stir in raisins/cranberries, chocolate chips, and nuts. Bake in greased 9x12” pan 10 minutes at 350 digress then 15 minutes at 325 degrees.Help me out with Swagbucks and we can both earn gift cards and PayPal money

Made these healthy cookies last night. We were not a fan lol (too healthy and I'm not a banana fan in cookies) But someone might like them here.
1 cup of oats
2 ripe bananas
15 ml cocoa
15 ml peanut butter
Mush bananas in a bowl with a fork. add cocoa and mix, add PB and mix then add oats. Drop on cookie sheet and bake for 10 mins at 350.

Applesauce is very good in baking. With apple season in full swing, you can make your own applesauce and then freeze it in 1 cup containers (margarine containers, yogurt containers, or ziplock freezer bags). The applesauce keeps well in the freezer. You can make unsweetened, sweetened or even spiced applesauce. Also with strawberries or rhubarb or peaches or pears. Its a multi-purpose thingie.
applesauce makes the cakes or muffins moist so you can eliminate some unhealthy items. Hope this helps you.

They're delicious. Very rich and filling. A small piece goes a long way.
Adjustments I made- I used one full, heaping cup of peanut butter ( as I am a peanut butter addict) and one whole cup of butter for the crumble/crust. Baked for 25 minutes.
Otherwise, I changed nothing. Deeee-licious! Highly recommend.

This morning i made 4 apple pies! One apple pie i baked right away and the other three i put in the freezer for future baking.

Because I, too, had the PC condensed milk on sale, I simply had to try these - and they are amazing.
I love Valerie Bertinelli's new cooking show, she's always been a fave of mine.
"Sick" Brownie Bites
I followed the recipe exactly, and they turned out perfectly. You must roll the balls when the mixture is warm, and keep kind of mixing it in the baking pan so it doesn't harden in places.
I used a heaping teaspoon so they are like a two-bite size.
