Two of the grandkids made their First Confession at Church yesterday evening, so i baked a Duncan Hines Marble Cake with chocolate icing and lots of different colored sprinkles. My daughter was having some friends and family over for dessert and coffee after Church.

I have been feeling good these last few days so I baked Turkey Pot Pie for supper Friday and Saturday. I also made a cherry pie all from scratch too.

So nice, so was their First Communion today?
Just took corn muffins out of the oven - son requested them, and he's coming over tonight.
I never grew up having them, and just discovered them a few years ago - I love them with chili, but my son just likes them any time.

Things are done a bit differently here in Québec. Next year around Easter will be their First Communion.

Baked 6 Croissants this morning. You know, the kind you get in the frozen box from Costco. They are delicious.

this was one of those " I wanna bake sumfin " but I was missing 1 or 2 ingredients for anything I looked up.
I decided on a recipe from one of my gluten free books called Sweet Potato Coconut Bars.
I did not have any gf shortbread cookies for the crumb bottom, nor did I have walnuts or butterscotch chips.
So I pulsed gf Kashi cereal, cashews and unsweetened coconut with the butter and pressed into a square pan.
The filling was mashed sweet potato, sweetened condensed milk ( for shame! ), eggs, cinnamon, ginger, nutmeg and salt.
It was pretty fluid ( not a like a thick batter ) but I poured it on the crust and baked for 50 min.
Removed and covered the top with the reserved crumb mixture that I added 1/3 c. cacao nibs and 2/3 c. dark choc chips to.
Baked another 7 min so chips melted.
Drum roll please?? This tastes just like a delicious Pumpkin Pie!! Wait till the gang taste it, I am NOT telling DD it is sweet potato ( cuz she hates them ) BUT she loves Pumpkin pie. lol!!

Started baking Easter breads today - did first batch of Babka dough in the breadmaker, it's just rising in cans (they are cylindrical loaves) and I'll put it them the oven right away.
But, drat, I put the raisins in too soon, and they got all smashed up, so the little bits have made the dough look a dull beige. They will taste fine, but just won't look as good.
I'll make another batch in a few days, so I'll be careful to not do that again.

^ So is their Bran muffin mix. I used to buy it when my son was young because he loved bran muffins, and I would just add raisins, coconut, nuts.
If I bought bran and wheat germ, I'd use them once then end up throwing them out because they'd go bad.
