I made a batch of blondies because I wanted cookies but have no chcolate chips
These ended up being really good though. Instead of melting the butter I just creamed it with the sugar and made it into a cookie dough instead of something you pour into a pan and bake. I did cookies out of it and the bottoms went kind of caramelized yum! I think I've had between 4-6 already and have now cut myself off LOL!

haven't baked lately....but my sister-in-law made an easy pineapple cake....just combine an angel food cake with a 398 ml. can crushed pineapple...frost with whipped cream......very yummy.

I decided to start using up some cake mixes I got for free or for cheap and made lemon cake Hungry Girl style -- used a lemon cake mix and just added soda (I used plain club soda instead of the recommended diet flavored soda because I don't do artificial sweeteners - maybe some pure stevia occasionally). Also added some fresh lemon juice because I looove lemon. It came out pretty good -- good enough to stave off my craving for the lemon cupcakes with icing that I get at my local grocery store. I would and make again.
Not baked, but I made - or tried to make -- larabar dupes. It was a lot of work and came out too sticky and soft to shape into bars. The instructions failed to say to use a food processor instead of the Magic Bullet I discovered that reading a second Larabar dupe recipe by the same food blog owner. I rolled some of a plain batch into balls with either pretzel bits or chocolate chips and a friend said he thought they were better than the real thing. Don't know if he was just being polite -- lol. But the batch I made with cashew pieces was really yummy and I think I might try it again. This is all the more surprising since I'm not a fan of dates -- well at least not date squares.

Made Cowboy cookies last night - wowsers, they are good! Good thing I don't make them more often!

Today will hopefully be peanut butter cookies.

I made a batch of gluten free, steel cut oatmeal and cranberry cookies, and a second batch with raisins in them. Then I made dh 2 dozen blueberry bran muffins and a dozen with bananas in them...only one problem, I had to use the neighbors outside deepfreeze as it all would fit in my freezer. I keep forgetting we're in the rv

Sorry to say I used a mix but it's better than nothing!
French Vanilla cupcakes - I swirled in some lime and aqua coloured batter, vanilla frosting decorated with a variety of sprikles.

Impossible pie is soo yummy. Whip ingreds together ,pour in pie plate and bake. The flour forms the crust, the rest forms the filling and coconut forms topping.
4 eggs
1/2 c marg
1/2 c flour
2 c milk
1c sugar
1c coconut
2 tsp vanilla
mix all together,pour in greased pan, bake at 350 F for 1 hour or till center tests firm.Last edited by wolfwoman; Sat, Mar 2nd, 2013 at 08:03 PM.

I'm on a roll this week...so far I made oatmeal crackers (Oh are they yummy!), raisin cinnamon bagels, cheese/onion breakfast muffins, fococcia bread and today 4 dozen cinnamon rolls.....

They're VERY good, hard to believe that the lemon flavour comes from only two lemons. I did use the zest too though, that might have given them more lemon power.
