Vegan red velvet cupcakes! They were so fluffy and moist. I totally want to make them again, 'cause there are none left! They tasted like their non-vegan version, too. :D

Does it still count as "baking" if I simply opened a cardboard box, dumped the mix ina bowl and added eggs and milk and stuck it in the oven? LOL.

I had apples to use up so replaced chocolate chips and bananas in a recipe for apples and raisins. So far no one has offered to taste it here yet, lol. Also just took blueberry muffins out of the oven.
