Making chocolate chip banana bread today and Gluten Freen Mediterranean muffins. I'm on a crazy cooking spree today. I just want to load up the freezer. I think this yucky weather is making me want to hibernate.

Making skor bar trifle for my brothers 30th birthday tomorrow.
Make a chocolate cake in a 9x13 pan. Make 4cup chocolate pudding with only 3cups of milk. Take a container of cool whip and mix in two bags of skor bits (reserving a few for the top). Cut the cake into thirds, then into 1 inch cubes or so. Layer cake, followed by 1/3 of pudding, and then 1/3 of cool whip/skor mixture in a glass bowl so you can see the nice layers. Repeat 3 times and then top with remaining skor bits.
It always goes so so fast at big family functions - huge hit.

This shouldn't actually qualify as " baking " , but since I placed the cookie sheets in the oven at 200 for 2+ hrs I will consider it as such.
I was looking for new little treats DD could take with her when she is with friends on board game or movie nights.
They eat the usual....chips, popcorn etc. DD has resisted, good for her.
Found a recipe called Cinnamon Apple Crisps, quite simple to do since I have a Regal slicer, sliced up a few apples
( paper thin setting ) and placed them all on the parchment paper on the cookie sheet, sprinkled them with a mixture of cinnamon and Stevia ( I just opened a bunch of the individual packets of the Stevia)
Lo and behold! They actually taste delicious! Crispy, tangy and cinnaminny!

i made empire cookies! super yummy light sugar cookies with raspberry jam sandwiched between and some confectioner's sugar sprinkled on top. Now my family expects them for EVERY occasion. They are kind of a pain in the butt people LOVE them. recipe from williams-sonoma.

Lemon sponge pudding. The batter separates while in the oven and you have a custard at the bottom and sponge on top.

Red velvet cupcakes...disappointed in the lack of taste.

homemade apple cake..that called for 4 cups of apples & 1 tbsp. cinnamon..........absolutely delicious......I've made it twice in the past week, and I'm going to make it again this week.

Bread of coarse, always bread, but I added sharp cheddar cheese chunks to 4 of the loaves and some fresh rosemary. This evening I'm going to make the first to layers for a birthday cake I'm making for one of my grandsons. I will finish the cake off next week the day before the birthday. I always like to freeze the cake for at least a week, I find when I'm icing it, the cake crumbs less.
I also have to make a batch of muffins for him to take to school the day of his birthday to share with his friends in kindergartenWe all need a little sunshine every now and then

I'm making cinnamon buns today, with this recipe for DH's Fathers Day breakfast. Of course DS helped roll 'em out and roll 'em up! They aren't baked yet, still rising:

I've made them before, you use your bread machine to mix the dough, it's really not hard at all and they're yummy. And the icing is cream cheese and butter...*drool*

Just made blueberry muffins with cinnamon crumb topping....we always pick pails and pails of blueberries each summer. Nice to have friends with blueberry bushes lol

A figurine of a tiger made out of modeling clay*. My daughter made it for her English assignment (related to the story Life of Pi). My oven is currently not working properly - the bottom element won't go to the higher temps, but 275 degrees was okay. I had to preheat using the top element, though. I can't wait until the new one arrives some time in the next week! Tried to get the husband to fix it and he refused. I have now bought three appliances in the past month: this stove and a washer/dryer set in May.
*betcha weren't expecting that!
