I have to stop coming into this thread. Seriously. Like...everything looks so tasty that I'm about to start licking my computer screen.
I haven't baked anything for awhile. In summer we tend to eat more icy treats...hehe. Keeping Chapmans in business, one bucket at a time! That's us. However, once fall arrives I will bake up a freakin' storm as part of my weird nesting thing I go through every September/October. Until then though, you guys are giving me LOTS of good ideas and I'm taking notes. I found a great website all about rhubarb. I am thinking about making rhubarb sherbert (no ice cream machine needed). I know it's not exactly baking, but it's appropriate for the hot weather.

Made carrot cupcakes with cream cheese icing...all good with apple sauce as substitute for the oil. Less oily for sure! YUM!

In my world, if it was a sweet dessert-like treat that caused dishes to be made dirty in my house, it counts as baking.
Oh. I just love peanut butter balls!!! Anything with peanut butter, actually. PB is my weakness.
Tonight, I caved and despite the heat, I baked low fat blueberry muffins with my DD's. Two batches. We got some blueberries on the 50% off rack at RCSS earlier today and they have been nagging me to bake muffins for a few weeks now because I'd let my supplies run down in the freezer in preparation for my annual freezer de-frost and clean. I hear ya on the peanut butter balls. I have a squares recipe that basically taste the same but without all the tedious rolling (just rolled meatballs on the weekend so I am a little sick of the rolling stuff). May as well be crack to me.
I am going to bake muffins this weekend I think.

- Wheat-free pizza crust is perfect for those with allergies and the herbed pizza sauce is made in 15 minutes.
Prep Time: 15 minutes
Cook Time: 25 minutes
Total Time: 40 minutes
Ingredients:- Pizza Crust:
- 1 Tablespoon dry yeast
- 2/3 cup brown rice flour or sorghum flour (see note)
- 1/2 cup tapioca flour (see note)
- 2 teaspoons xanthan gum (see note)
- 1/2 teaspoon salt
- 1 teaspoon unflavored gelatin powder (Knox)
- 1 teaspoon Italian herb seasoning
- 2/3 cup warm milk (110 degrees F.) or non-dairy liquid
- 1/2 teaspoon sugar
- 1 teaspoon olive oil
- 1 teaspoon cider vinegar
- Extra rice flour for sprinkling
