Milk bread (Similar to brioche, without so many eggs/butter)!
It was my first time making bread from scratch that actually turned out perfect.
Looks like I'll never buy another loaf of brioche/challah ever again
I made a batch of buns, with malt powder and a loaf with powdered coconut in the dough. Yum.

1 of 2 cakes that I made last week for my 25th Birthday
I'm pretty admiment about making my own every year. lol
Two layers of chocolate cake, fresh strawberry compote in the middle and the entire cake covered in a chocolate frosting.
Totally vegan, except for the Callebaut Crispearls (white chocolate, dark chocolate and strawberry) used on top!
It was a 5 inch (diameter) cake, perfect for my family of four, who are all for the most part sweet-toothless.

Wow, thanks everyone!
My grandfather passed a couple weeks ago and he was an avid baker. He even ran a baking class!
I guess he's teaching me his ways in spirit.RIP <3
The recipe I used was adapted from here.
But I changed it a bit - haha as I do with all recipes.
I just typed this all out, so if there are any questions or if there's something missing, let me know!
Ingredients
4 cups all purpose flour (for the malt kind, I added 3 tbsp of pure malt powder. For the coconut kind, I added 1/4c of powdered coconut)
1/2 tsp salt
1/4 cup lukewarm milk
2 tsp active dry yeast
5 tbsp sugar
1 1/4 cup lukewarm milk
2 large eggs, beaten
2 tbsp melted butter
egg wash (egg lightly beaten) for brushing
Seeds (optional) for sprinkling on top of the bread
Oil/melted butter for greasing the bowl and the baking pan(s)
Kitchen Aid method!
1. Combine flour, 4tbsp sugar and salt. (and flavour powder if using)
2. In another bowl, combine yeast with the 1/4c of warm milk. Add in 1tbsp of sugar and let sit for about 10 minutes.
3. Pour yeast/milk mixture into your Kitchen Aid bowl and add the the rest (1 1/4c) of warm milk along with the egg.
4. Add in half of the dry mix and with your dough hook, turn the machine on at level 2.
5. Slowly start adding the rest of the flour until the dough pulls away from the sides of the bowl. Add flour tbsp at a time if it's still too wet.
6. Add the 2 tbsp of melted butter and allow it to be incorporated into the dough.
7. Take the dough out, grease the bowl lightly and return the dough back. Cover with a damp towel and leave it somewhere warm for about an hour until it's doubled in size.
8. Punch the dough down to release air bubbles and either roll it out and divide into 9 balls/buns or one large loaf!
9. Cover with a damp towel and let rise again.
10. Brush egg wash all over the top and sprinkle with optional add ons.
11. Oven at 375F, about 30 minutes for buns, 35-40 for a loaf. I just use my nose and eyes to judge if they're done!
12. Rest for at least 30 minutes before removing from the pan and wait until the loaf is 100% cool before slicing.
If you're making buns, feel free to wait the 30 mins then dig in!

Janetta, you should submit those photos & your recipe creations to magazines for publish! Not only can you bake, but your photography is absolutely as professional as it gets! "Homemakers" or "Chatelaines" .... submit & you will recieve recognition! I'm sure of it!
