Vegan olive oil cookie packed with peanut butter chips and chocolate chunks!
Chewy in the middle, crisp around the edges and totally not packed with butter.
Made about 24-26 cookies, used 4 tablespoons of olive oil. Ground flax replaces the eggs.
So...basically, these are healthy. Minus the sugar. lol
I dyed the dough orange and made luster dust-y coloured sugar in black, purple and neon green for...Halloween!

I baked a gluten free chocolate cake(made from carob chips) this morning, in between each layer of cake I put a raspberry reduction and fresh raspberries. Iced it with a wonderful icing made from carob chips too. I like using them better than chocolate chips, the icing is no where as sicken sweet as normal icing is.
We all need a little sunshine every now and then

muffins and cookies made with raisin bran!
couple of weeks ago, I melted some peanut butter with butterscotch icecream topping and mixed them with the last box of honey-bunches-of-oats! super awesome!

Yes, I use it all the time. I just find chocolate can be very sweet, depending on the application. Plus my pooch loves a carob chip every once in a while. I have so many people tell me I will make her very sick, but when I explain it's not chocolate all of a sudden I have them asking where they can get some of it, lol.
Carob and coconut flour are two of my favorite ingredients to bake/cook with. Have you ever tried cocomut flour?We all need a little sunshine every now and then

wow girls!!! Amazing treats in your kitchens!!! I have a question...what is a carob chip? And how is Olive Oil NOT vegan? It's a plant...am I missing the definition of vegan? hmmm....Oh...and substituting ground flax for eggs?? Really?? And the cookies were moist nonetheless?? OSSUM!

Carob comes from a tree. Olive oil isn't vegan because it is cooked/processed. Vegan refers to raw, in its natural state. Someone correct me please if I'm wrong

OMG, you folks are killing me with all your photos and posts I'm busy with my course and papers and haven't had time to bake sweets - especially the pumpkin cookies I like to make this time of year.

So...do people who eat "vegan" only eat raw, pure, uncooked foods? Different from vegetarian right?
Carob chips are pieces of a tree ;P That doesn't sound good...lol...will have to get some from the bulk barn? and try.
