I'm making grilled salmon tonight with rice and veggies, but I'm also hoping to have time to make some dishes to freeze. I was thinking or making shepherds pie, meatballs, some sort of chicken breast, and scalloped potatoes (probably not all today because I have a tonne of work to do). Has anyone had luck freezing these? I wonder if the mashed potatoes on the shepherds pie will be okay...

I have never done scallop potatoes and froze them so I can't answer that but I have done meat balls and chicken. I usually par cook them and then after they are cooled I freeze them using my vac sealer so they don't get freezer burn. Plus since they are par cooked they don't dry out when you re heat them
