This picture isn't the best, but I was so happy to get some winter squash this year! Usually, our growing season is too short (zone 2a) to grow much in the way of winter squash, especially large ones. We were able to harvest 4 North Georgia Candy Roasters (we gave one away, thus the 3 pictured). The largest was ~22 inches long and 12 lbs. I will be growing these again.

My entire garden still needs to be harvested. We are suddenly being hit with 10-15cm of rain and potential for a little snow. Wednesday-Saturday forecast lows of -1 to -4. It looks like it willy dry up some Thanks Giving weekend and warm just into the teens during the day. Would my carrots and potatoes be ok until the weekend? I'll obviously harvest all of my tomatoes, zucchini, and Swiss chard before it freezes.
This is the first year in a very long time that I have extra garden carrots. What is the best way to store them? I do not have a basement or cold room.Help me out with Swagbucks and we can both earn gift cards and PayPal money

i don't think your carrots and potatoes will freeze yet .. I left ours in grow until middle of October lots of years .. unless you guys get alot frost and ground freezes .. Way I store mine .. Take cardboard box and line box with wood chipping( Friend of mine got sawmill) then put layer of carrots then wood chipping again until box is almost full . Top it off with layer wood chipping . Then I store them on shelf in our garage. Most my carrots I par boil them now .then freeze them in zip lock bags ..until I need them ..ones I need for soup or stews etc .i par boil and let cool down then I slice them up and put them in zip lock bags and freeze them .. When I need them .. their ready put in stews or soups .

I turned 24 medium and large sized yellow and red tomatoes into chunky sauce, smooth sauce, and tomato juice. I got a gallon in total and froze it.
I still need to harvest my carrots and potatoes. The ground is still fairly wet. We keep getting a little rain or snow without much of an opportunity to really dry things out.Last edited by Angela273; Thu, Oct 13th, 2016 at 11:50 AM. Reason: Fixing auto correct errors

Well it is freezing rain here today so I harvested my turnips and the rest of my carrots last night, I had the chard covered all week because of the snow last week and I couldn't believe it made it so will be blanching and freezing it today!! I am really going to miss my garden veggies!!!

oh @kidsteph !! As I look at your last pickins for the season I am reminded of produce that I had gathered one day in August ( I think? ) I was so thrilled with my wee harvest that day.

I planted a large container garden with terrible results. I planted 7 butternut squash plants. Tons of blossoms, and produced one teeny tiny squash that fits in the palm of my hand. No beets, hardly any radishes, no spinach, no mixed lettuce, 4 or 5 baby cucumbers. Did not bad with green beans, kale, small carrots, edamame. dh built me 2 raised beds so hopefully we will have better results next year.

Tonight's haul before the frost
Tiny veggies and still debating whether to make a "small" pot of ratatouille.
