Well my son and daughter wanted so pull pork for easter supper so I decided to make some for them! It took 17.5 hours to cook my 12 pound pork shoulder at 225 degrees F!

i made ham with scalloped potatoes, broccoli, cauliflower and cheese sauce, steamed carrots, mashed yams, deiled eggs, home made dinner buns, and lemon meringue pie.

Did week 5 ( or is it 6 now ?) of meals for DD's plan. ( mostly grilled chicken breast, some turkey breast meat from the Easter bird, even made DD her very own cranberry sauce using Stevia to sweeten and xanthan gum to thicken ) 5 more " burgers " from ground chix. ( they are so cute at 2 oz each! lol)
All her carbs are in containers, the mashed potatoes, the brown rice, she can take some for each meal, as well as all the veg too carrots, green beans and broccoli.
The guys have been coasting since Sat on the remainder of the turkey, but today I will send them to work with lasagna that I baked up this a.m. Didn't want them sick of eating turkey too soon. lol

Tonight its salmon which I will marinate in some soya sauce, ginger, garlic and honey. Will also make vegetable rice and maybe some roasted peppers

Oh, reading these last few pages of entries is making me hungry!
Had to tell you about our 'garlicfest' last night!
I roasted a pork loin, which I had marinated in a dry rub of Montreal steak spice, and inserted slivers of garlic into slits - probably about eight cloves' worth.
Then, for the first time, I roasted whole garlic bulbs - and put two whole ones into the potatoes before making smashed ones - and wow, was that ever good!
Made a gravy from the pork drippings (which were heavily garlicked), and also had peas (son joked, what no garlic on them?)
Putting it all together, it made for one awesome plate of supper! Son asked if we could have this every day, lol!
Good thing we all stayed home in the evening, and shared our garlickiness.
Man, I couldn't believe how awesome the house smelled while it was all going on - and later into the evening - someone should make an air freshner of that scent, lol!
I bought a huge net thingee of garlic bulbs, so I'm going to roast up a whole bunch of them before they dry out.
I always see Rachael Ray do this, and use them - and I guess I'm finally getting with the times!
holly, for the roasted garlic butter - do you just mix the roasted garlic with butter, put on bread/bun, then broil?
