    i'm not too sure tonight... i might make chicken alfredo with some garlic bread. the kiddos will like it and dh can take leftovers to work for the next couple nights.

    So last night I ended up eating... a summer spinach salad with grilled chicken, blueberries, goat cheese & pecans with a raspberry vinaigrette.

    Tonight is turkey dinner...turkey, stuffing, veggies & maybe some scalloped potatoes if I feel like making them. Mmm yum yum

    I made meatballs which weren't balls from lean ground pork - I cooked them in muffin tins. Made a mushroom sauce with fresh mushrooms, onions, and celery, and let the little meatpucks soak in them for a bit. Served over smashed potatoes. Very heavy meal for a hot day, but oh, it was good! Served with homemade bucket pickles.

    I took the leftover cooked new potatoes and gfently crushed them with the palm of my hand and pan fried them in some leftover bacon fat from the night before . I sauteed mushrooms in the fat and adeed the leftover burger patties I chopped and the roasted corn. I then added a "block" of Boursin cheese and some milk to make a sauce. Finished the dinner plate with a fresh salad with some of my garden tomatoes
